TheGypsy417 — Restaurant in Springfield

I finally got an opportunity to try TheGypsy417 yesterday & it was delicious! Jake, the owner, was awesome & a pleasure to talk with & meet. Before I really even said anything, I had a warm, sample cookie in front of me. Cookies are my favorite & it didn’t disappoint. I ordered the deviled egg salad & it totally hit the spot. He was even nice enough to give me a bite to try 1st. The ingredients & croissant were fresh & were perfect for a hot day. I recommend stopping by & trying one if he has any left and if not, anything else on the menu. I added on a piece of dark chocolate caramel cake, mostly for my husband. Of course I had a few bites, lol. It is & was incredible! It is a huge slice of cake that we are enjoying sharing together. Jake had a whole cake made up as well. It was beautiful & his prices are very reasonable. The next time I am in need of a cake for a special occasion, I will definitely be ordering one of his many selections. Guys, right across the street from Planet Fitness on Republic Rd is a food truck called TheGypsy417. I appreciate a good food truck. I impulsively pulled into the parking lot and went to check it out. I met the people running the truck, Jake and Theresa. They seemed extremely nice meeting them for the first time. I ordered the fresh watermelon lemonade and the coconut curry. My boy chose the tomato soup and grilled cheese. They made all of the food fresh to order. Jake gave my boy and Chupa whistle sucker. He had us try a spoon of the strawberry icing that he made with fresh strawberries. It was so good! We made it home with our food. My chicken curry is amazing. I have achieved a grownup goal and eaten my veggies for the day. My boy pretty much devoured his grilled cheese and soup. The soup is filled with veggies and flavor galore! My roommate and I indulged in an unforgettable meal featuring Buffalo mac n cheese with Cavatappi noodles, Beef Bourguignon, and Chicken Marsala, each dish crafted to perfection. Every bite was a testament to the care and thoughtfulness poured into their recipes. Even my roommate, who rarely compliments food, couldn't stop raving about it. The flavors were perfectly balanced, with the richness of the beef Bourguignon, the satisfying spice of the Buffalo Mac n cheese, and the savory goodness of the Chicken Marsala.

To top it all off, the banana cake and carrot cake were simply divine — light, moist, and full of homemade flavor.
