I went again, I met the NEW owner. She explained that yes, there is a different cook, but told me where I could find the previous owner. The owners are related, and the cook occasionally works at the other restaurant. 🙂 You know how it is when you get used to a certain someone cooking for you. 😁 Mmm The food was good and the conversation with her was great. I want to thank her for taking the time to introduce herself and explain things to us. I'm looking forward to returning again soon. . __________________________________________ Previous Review: I hadn't been here in quite some time, it's not the same. It's redecorated and looks very, very nice, perhaps a little too bright. It seems the cook is not the same. Not as good as it used to be, but not poor tasting either, just doesn't knock me off my socks like it used to. It's missing something. I ordered my usual meal and the plate was noticeably smaller, there were a LOT less vegetables, and the chicken from my stir fry was very, tough, I could not eat it. The Pho was spot on, tasted as delicious as it ever did and was a very generous portion. If you haven't been here in a while, the prices have increased. (But that's to be expected) and the menu is now smaller. I'm not sure how often I'll be back, but I know I'll at least give it one more try. . ___________________________________________ Previous Review: OMG, I LOVE this place! Definitely my new absolute ""FAVORITE"" place to dine! The servings are very large and the food is amazingly delicious and cooked to order! And FRESH, FRESH, FRESH produce. There is no way to eat all of what was served, I always have to take most home. The establishment is a very small hole on the wall, probably about 12 tables or so, you won't have a lot of privacy because it's very popular. Each time I've been there it was pretty busy. One time it had to be at least 8:00pm. And the staff? Well any staff that I've seen or met is so genuinely nice! The menu is written in two languages but the English translation isn't always descriptive enough. If you're unsure about any of the plates offered, don't hesitate to ask, they take their time to do their best at explaining it. I seriously can not say enough POSITIVE things about this place. You've got to at least TRY it!

Vinh Chau has all of the makings of a good Vietnamese restaurant right as you walk in the door. The place is modest with good light, expect decor, glass table tops with menus underneath them, and table tops with caddies full of utensils and sauces. The servers are prompt, warm, and welcoming. They take your order and give you advice when there is confusion, such as if they think you are not ordering what you think you are. Additionally, they watch for your needs and act quickly. The food also appears at a good pace as well. I had the special pho and spring rolls. The first thing that excited me was that the peanut sauce wasn't just a liquified peanut butter - it was thin enough for dipping without it being a pasty glob and it tasted delicious and light. The spring rolls were simple and clean with the right flavors. The pho was excellent. I have tried pho from around the United States of America and in Vietnam. This place gets it right. You can taste it in the broth the moment you taste it, and you almost feel bad for adding in the peppers/basil and changing the flavor. The best thing is that the broth flavors are strong enough to be complimented by the basil and peppers rather than masked. The meat and noodles are all tasty as well. I will be back to try the rest of their menu soon.

This is by far, hands down, the absolute finest, authentic Vietnamese cuisine in the North East. A very homey Asian setting, with wide open tables. The menu is pages of every type of Flavor from the land , and includes items not normally found, like alternate soups and noodle dishes. The Viet Raviolis and Egg rolls are generous portions with home spun sauces for each. The Beef Pho' has the most flavorful , aromatic broth , and the best ingredients I've had in 3 decades. The service was prompt, courteous, and friendly. Not yet have I given 5 stars to any restaurant of any kind , since becoming a food guide. Vinh Chau gets all 5 and then some. Find your way through the South Eastern streets of Springfield , park it, and step into a most satisfying Vietnamese dining experience. You've made the very best choice.

Okay so im going to be doing a huge comparison between the current (Fairly new owners, to the old) THIS IS BASED OFF FOOD AND PORTION SIZES STRICTLY. First off they were great when it came to customer service 100% no doubt. BUT unfortunately i have some qualms. To start, your spring rolls are way too small for the price, when i was coming here prior they used to be 5$ and almost triple the size. Plus they also had two types of spring roll versus one which isnt a big deal but provides more variety to the value. BIGGEST QUALMS YET. So as much as i love the spring rolls, there food was amazing. Now the new food is good BUT its 100% lacking that Vietnamese authenticity. If im going to be BRUTALLY HONEST. Tasted extremely bland and kinda felt super white(americanized). There used to be so much flavor in the dishes. Now onto my soup. Now it was actually very spot on to the previous owners but with that being said yall being skimpy on sizes of fish product i got the current #18 and was a little disappointed at the size of fish balls and fish meat etc. All in all it was okay. But wasnt what i was wanting :/. Hopefully this helps them get back to some roots...
