The service tonight was terrible.
My salad showed up without silverware. It took time to find a server who could get me silverware.
I wanted pepper for the salad. Again, I had to hunt to find a server who could provide that.
My pizza wasn't even warm. Since it was dry, I figured there was no point in asking to have it warmed up, as that would have dried it further.
A friend across the table from me had to wait over half an hour for a simple sandwich.
When I mentioned this to another waiter, he said the kitchen manager was out. I can accept that. But if your kitchen manager is going to be out, you need to have a backup. Same with waiters, in case you find yourself short staffed.
I deducted the automatic gratuity on my bill, and wrote a note explaining that the service was so bad I should not have been required to pay a 20% gratuity. When the bill was charged to my credit card, they added the 20% back on.
Any restaurant can have staff shortages. I understand that. But a well-run restaurant has backups in place to handle that, or then does not expect the customer to provide an automatic gratuity for good service that was...

If you don't know exactly which wine that you want to buy, do yourself a favor- Ask for Max. He knows what marketing will not tell you, and he is damned glad to share. Marvelous resource for boutique wines at excellent prices. He knows what is trending, and whether it is worth the fuss.
