Romo Tacos — Restaurant in Summerlin South

WOW!! Omg!!! Finally some amazing tacos close by!!! The RIB TACOS are unbelievable!! I couldn't even wait long enough to get a picture before starting to dig in, they smelled MOUTHWATERING...then there was no turning back. Luckily, they give 2 full ribs per taco, so you can eat one while taking the other one off the bone for the taco 😅 My first thought: no sauce? Omg no sauce needed with this smoky flavor! The owner said they smoke the ribs for 9 hours and you can taste it!...if that wasn't enough, once you add the SALSA you will be immediately transported to a multi-dimensional experience during which your taste buds will meet the Creator, themselves. I'm not kidding. Everything is so fresh. The tortilla was clearly made from scratch, in addition to everything else! We ordered a birria taco which was yummy as well but had no light left after the rib taco stole the show, and our hearts. 💛....but we didn't stop there

We added the chicken wings and fries and oh my goodness..the Asian Zing wings are like nothing else. It has like a peanut sauce kind of flavor to it and I just wish I had more to drink it; it was that good! The fries are regular crinkle fries but dip those fries in the HOMEMADE RANCH?! Deliiicious!!!! The ranch is soo good!! Very heavy on the dill which I appreciate so much!! Will be ordering an extra side of that next time.

The owner (or associate?) was outside the truck talking with us while we ordered and waited, and was super welcoming and friendly. Seem like genuinely good people serving genuinely good food here ☺️ He even gave us a free Mango juice, which was so delicious and fresh! Like drinking a mango. You can taste the love in this food. Win for the neighborhood, thank you...

Eating at this spot was like watching The Godfather. A masterpiece with layers of depth you didn’t see coming. The wings? They were Michael Corleone: unassuming at first, but when they hit, they HIT. Crispy on the outside, juicy on the inside, like a perfectly executed betrayal in a crime family drama.

Now, let’s talk about the homemade ranch. That stuff was the Forrest Gump of condiments. Simple, wholesome, and so versatile it deserves its own Oscar. It didn’t just complement the wings; it elevated them. Every dip felt like a heartfelt “Run, Forrest, run!” moment, propelling my taste buds to victory.

Then came the crinkle-cut fries. Honestly, they stole the show like Heath Ledger’s Joker in The Dark Knight. Crunchy, golden, and so full of character they could carry the entire menu on their own. I’ve had fries that tried too hard (Justice League, anyone?), but these were flawless. Best fries I’ve ever had, no exaggeration. I’m still replaying the memory in my head like it’s a Scorsese classic.

And finally, the Filipino mango juice. This was the Inception of beverages. Sweet, tangy, refreshing, and layered with flavor. Every sip felt like another level of the dream, and I was begging to stay under. Is it mango juice, or is it pure cinematic gold pressed into liquid form? I don’t know, but I’d like to thank the Academy.

I Love this food truck and so does the family ! They have fair prices as well on all the food the even have an all you can eat option ! Y’all have to try them I am a Mexican food fanatic and I have not been able to find flawless Mexican food out here in Vegas for three years then one day I just decided to stop and try them , when I say there carne asada tacos are fire 🔥 they are fire and I don’t know what they put in there green sauce but man oh man I wish I had that recipe and they have the best birra tacos in town they were closed and me and my family went around town to find some we went to a few different places and not one of them compared to Romo’s tacos!!!! And they have hands down the best customer service experience I’ve seen in the industry in a while before I even got close to the truck I was greated in the most friendly and respectful manner possible they have such great customer service I go just to say hi half the time and end up buying some food even though I have cooked at home heck my kids love them so much they always stealing my food I will have to sneak out and go over to Romo’s taco truck by myself if I want to treat myself by myself because if they find out I went by myself I get hell but the food is worth it . they are located in the smiths parking lot on w Tropicana and jones Blvd they are just a must try you will not be disappointed they are fire and have a very friendly environment.
