Elevated Fine Dining at The Huntsman – A Culinary Celebration Worth Remembering
We recently celebrated our daughter’s graduation from Florida State University (FSU) at The Huntsman Restaurant and Bar, and the entire experience was nothing short of extraordinary. From the moment we stepped inside, the atmosphere radiated class and comfort. The elegant bar setup instantly caught my eye, signaling that this is a place where handcrafted Old Fashioneds and curated cocktails are serious business. My Whistle Pig Old Fashioned was smooth, perfectly balanced, and honestly one of the best I’ve had.
Andrew, our server, was exceptional—warm, knowledgeable, and thoughtful. His recommendation of the Rabbit Makhani from the main course menu stole the show. With its savory Indian curry, cardamom basmati rice, and garlic naan, it was so incredible I paused mid-bite on my 16oz Prime Split Bone-In Ribeye—which speaks volumes!
Our table shared a variety of stunning starters: the A5 Wagyu Pierogies with hazelnut pesto and beet butter, the crispy eggplant with mascarpone mousse and pearl onion agrodolce, and a generously portioned charcuterie board that hit every note from salty to sweet.
Dining in one of their private rooms made our celebration feel intimate and personalized. Even the valet team added to the experience by walking each of us to our vehicle with umbrellas during a light rain—pure hospitality at its finest.
To top it off, we were gifted a bottle of WhistlePig 10-Year Single Barrel, exclusively bottled for The Huntsman. That thoughtful touch sealed the night as one of our most cherished family memories.

Read moreThis was my first time dining experience at The Huntsman and will most likely be my last. So coming into the experience the drinks & one of my appetizer’s were the only thing that I would grade above a one star. Everything after that was down right disgusting and disrespectful from management as well as waiter. I actually feel bad for the employees because they follow a script the manager tells them to say. They don’t speak for themselves! Upon looking at their menu I was very inspired by the food choices upon ordering everything sounded very appealing I wanted one of everything. I decided to settle on 3 appetizers because I felt like they would fulfill my hunger and give me a great experience to try multiple items without feeling overwhelmed with a meal. So I ordered the wild game manti, Octopus Kokkinisto, & we’re both disgusting. The third appetizer was the elk tartare and I enjoyed that item. I explained to the waiter I wasn’t happy with the other two appetizers and wanted to exchange them for an entree. Upon trying to explain to the waiter the flavors seemed very off the manager said I ate half and wouldn’t comp me or even apply it to a new meal which I would be paying extra for anyways. He would only comp the wild game manti which I clearly didn’t touch. It was gross! The manager was very argumentative and I felt like I had to defend my case. In the food industry it should be an automatic you’re not happy how can we make it right!! That wasn’t the case at all. They made me feel very uncomfortable and it was an already stressful situation having to complain about my food and they just made me feel stupid that it was my problem. My husband even had to intervene and help me talk because he could tell I was struggling to speak and the owner was undermining my words and just overall making it very uncomfortable. Then they proceeded to want to escort my husband out they “ thought he was raising his voice” whatever if you have such high standards of your restaurant maybe relocate to Naples or Fort Lauderdale!
They had no problem adding another $45 meal to our bill but no way we’re they going to comp a baby portioned appetizer. My mother-in- law was visiting from out of state and I was very excited to bring her to what I thought was a reputable restaurant in Tallahassee but clearly it’s Not!! Do your self a favor and don’t waste your money on this place. Until management changes or the owner wants to take better care of his customers I would proceed with caution. Oh and I left hungry! My husband and I came to The Huntsman restaurant to celebrate his sister’s birthday. Though it’s been only open for less than a year, this place has certainly created a buzz around town. I could not have been more excited to finally try their food and my god they did not disappoint.
The first thing you see when you walk in is a beautiful cozy bar with a small sitting area. I would have taken a picture but we were quickly attended by the host. She quickly took us pass the bar and into a large modern room, surrounded by paintings and a beautiful green subway tile backsplash. The chairs are dark but the tables are marble white-like an empty canvas waiting to highlight beautiful art in the form of wild game, field and stream to table cuisine.
Our waiter was Angel. An exceptional gentleman who knew the menu inside and out. Suggesting his personal recommendations based on our palates, attentive to our needs all while going to the bar to make me a delicious fall mocktail.
The restaurants seasonal is one filled with a variety of dishes and protein choices for all kind of foodies, vegetarians and even picky eater’s. I knew I wanted to be adventurous so Angel suggest I try the Grilled Axes Deer Sauerbraten. My husband who is a picky eater ordered the Moulard Duck Cassoulet. My sister-in-law ordered Angel’s favorite dish, the Ell tenderloin with iron seared brussel sprouts while her husband went with the Wagyu Denver Steak with sautéed mushrooms. We ordered the crispy eggplant as an appetizer.
The food came out relatively quick. I swear this is what heaven must be like. Every bite of every dish was perfectly cooked and seasoned to perfection. I can’t describe how delicious it was only how it made me feel: a delicious surprise in all of our palates and overall wonderful culinary experience.
Dessert was equally satisfying. We ordered the Bread Pudding campfire s’mores Cake apple salted caramel cale with cinnamon dolce custard. Oh My God.
