Rotelli Pizza & Pasta — Restaurant in Tamarac

Dear owner: Forced to revise my original 5 star review to 2 Star after multiple visits and disappointing Pizza...

What happened to your Pizza???

I use to look forward to your pizza every Friday and or Saturdays... Sometimes twice per week...

Not sure what's going on, but your pizza has taken a turn from a perfect pizza to a far from perfect pizza :(

I'm writing you with the hopes you can turn things back around... I'd like to keep coming back.

As a pizza buff (could have been born a Ninja turtle), I can certain tell you that the culprit is way too much cheese (assuming you haven't changed any ingredients).

And while most amateurs would immediately think adding a lot of cheese is a good thing, adding too much cheese to any pizza is actually a recipe for a disaster... It's a big no no (just ask emerald lagasse)... He'll tell you himself... When there's too much cheese, it creates s snowball of problems... The cheese becomes tough and chewy as opposed to nice and gooey (as experienced)... The sauce becomes trapped and cannot breathe nor evaporate (so it stays watery sure to bring trapped), keep in mind allowing the water base in the sauce to breathe and evaporate is necessary for the cheese to adhere to the bread... And since the pizza cannot breathe (due to excessive cheese) the bottom of the pizza dough is overcooked, as the layer of the pizza dough remains uncooked. What you end up with is an overall tough pizza, whereas the cheese slides off the pizza when you take a bite. :(

In short, lighten up on the cheese and everything else will return to perfect.

I'm only going out of my way to tell you this because I really enjoy your pizza... Not to mention you also have very nice people working there.

Keep in mind I am a pizza eating enthusiast...

So the other day, a friend of mine, gave me a couple of slices, he got with his salad meal during the lunch special hours...

At first glance the pizza looked delicious and I said boy that's gotta be fantastic...

it only got better from there... The pizza was delicious.

I have been looking for a real pizza joint for a good long time... I found it.

So the next day, I was driving home and figured stop in and grab a slice to go...

I missed the lunch special (ends at 4pm)... But the pizza is so good, I bought an entire pie and I'm gonna enjoy it all by myself. I'm just kidding. I'll take some home for my kids. :)

keep in mind they already had me at pizza, but the service was warm and friendly as well, just as good as the pizza!

Good old fashioned good service, hard to find these days.

I will certainly be back.

You all should stop in and support your local restaurant and give me some feedback.

Rotelli Italian Restaurant, Tamarac - Review

Our visit to Rotelli Italian Restaurant in Tamarac was nothing short of delightful. The pizza was crafted exactly to our specifications, satisfying both my son's and my preferences perfectly. He fell in love with Rotelli's pizza at a classmate's birthday party and hasn't looked back since, and I can see why.

The server was exceptionally friendly and accommodating, adding to the overall pleasant experience. Many of the staff members spoke Italian and we overheard them at they're actually Italian which explains why the food was very authentic. Despite the restaurant having a slightly dressier atmosphere than your typical quick-eat spots, it retains the laid-back vibe of a beloved mom-and-pop establishment.

Our food arrived quickly and was served piping hot. The attentive server checked on us multiple times and even offered me a soda to go, without my asking. This level of service really stood out and enhanced our dining experience.

We indulged in their classic cheese and pepperoni sausage pizzas. The sausage was thinly sliced and lightly browned, just how I prefer it. My son's pizza was made thinner with light sauce, and they nailed it perfectly.

My only issue would be that the area we sat in was a bit warm. Not sure if the AC was having issues.

Rotelli's has certainly won us over, and we're looking forward to returning for more of their delicious, cheesy slices. If you're in the area and craving some well-made pizza, Rotelli's...

I have always enjoyed Rotelli, been to 3 different ones with no disappointment but I wouldn't eat here again. Maybe they were just understaffed but it was too many things. I asked about a coupon and the server said he would have to ask a manager if they accept it but there were no managers onsite.. then he says oh the owner is here but when I was going to pay he said oh the owner left for a delivery ... So I paid full price. Now here's the thing fine whatever you're new but the food was subpar at best.

Garlic rolls were so oily that they were soggy on the bottom and oil oozed out when you but into them. The meatballs appetizer were good not great but good. Baked ziti was unbelievably bland, I ended up putting cayenne which helped a lot. And then for the eggplant Parm, the spaghetti was described to me as watery tomatoes and my mom's last bite had something hard in the eggplant, having no clue what it was but she was so disgusted she tossed it, so I wasn't able to show the server. 🤦‍♀️

Why didn't I speak up during the meal? Server never came to check on us .. or see if we needed beverages topped off .. only came for the check and when we did try to address just a couple of things they were brushed off, mainly the coupon because I paid over $60 for 3 people but the quality and service shouldn't have cost more than $10 pp. They really...
