Review based on 1 dish (Pho Tai Bo Vien - Pho with meatballs and sliced beef) This is Guam so I didn't expect the restaurant to have all the "correct" ingredients and I was not disappointed. That being said, compared to other Vietnam restaurants here, the Pho here is 5 stars. The broth had excellent flavor. I've had Pho from Vietnamese owned and run restaurants that tasted like they just heated up the dirty dishwater. This is definitely not one of those. The broth had soft layers of flavor as Pho should. The vegetable toppings were extremely fresh looking. The portion is a little smaller. I'd say if a restaurant had regular and a small, this would be equal to the small but it is still big enough to have as a meal. The staff was great. Attentive but not too much so you keep having those awkward moments trying to answer right as you take a mouth full. The Decor was clean and simple. I didn't use the restroom so can't speak to that. Having stopped going to Vietnam restaurants in Guam for years due to disappointment, I am excited to go back and try more on the menu.
A suggestion for the restaurant: offer to have the beef served raw so we can put it in ourselves. Since sliced thin it overcooks by the time we get it, finish playing with our toppings and finally get to eat it. Many restaurants do this in VN...

If you want people to sit wherever they want then put a sign up saying so. Multiple times during the meal my table needed something but there’s no servers actively watching the dining room (mind you there are 3 servers for something like 13 tables in a small room) we had to literally yell for service. Drinks never refilled. The fresh lumpia ingredients were decent but it was rolled like a bag of loose trash and fell apart when picking it up. You’re probably better off making everything self serve and having a cashier. I cannot fathom why all 3 servers would stay behind the counter facing away from the dining room chatting. Read moreEdit: Got to try the food at Mà's Kitchen, and as I thought, it was delicious. The Bahn Mi is killer. Perfect baguette, the Pate, roast pork, and meat are all flavored well and balance together. The Pho was packed with flavor. Strong notes of spices, rich meaty broth, and a great selection. You get the Build your Own Pho option which is great. Try the Thaos Chile Paste if you like that kick. I'll be back to try some more of the menu.
Wish I could have tried the food.
Walked in, stood there for about 15 minutes before the ONE server told us the only available space was at the counter. There were 3 empty tables. We sat down at the counter and waited another 15 minutes. Saw a group of ladies walk in and seat themselves. Within minutes they had service. We Just decided to leave. Food looked and smelled great. Service needs major attention.
