Their products are usually on point, when fresh. The apple pie is great and most of their pies and cakes are very well-done and consistent. I have two bones to pick. Being a fellow CIA alumnus, I appreciate customer service, the backbone in the hospitality industry. Sometimes they miss this mark. They will absolutely NOT make substitutions, even for sensitivities for something extremely simple as omitting walnuts in a product. I get it it, for allergies they can't guarantee that cross contamination won't happen because it's in the house, but it's not that hard to leave the walnuts out on a special order. Speaking of which, why can't they make a custom birthday cake? We're not looking for a Buddy Valastro fondant monstrosity, just some choices for cake variations. It's a special order for Pete's sake. If I have to order 2 weeks ahead, tell me, I'll wait! Second, the pies are great when they are fresh. It's happened many times (we go frequently and gamble on quality because when we get lucky, the pie is that good!). At times, the pies have been previously frozen (especially Apple) , which is just such a let down. It would be great (and good business practice for transparency) that they would honestly say that "these have been previously frozen " so you know what you're getting when you're expecting a fresh pie. I have to say, it's still a great bake shop, but it was better in many ways before the transition of ownership. I know it's the same family, but it's not the same. I'm considered a food critic in my house,and I disprefer biased information or reviews. This is not the first time I've been to this bakery, and I'm trying to withhold some of my excitement but yes I would absolutely recommend this bakery to try atleast once if you're ever land in Long Island.
One word that comes to mind is the bakery is rich, and very full.

Highly recommend : I'm assuming everything but what I always get are the raspberry and apricot bars and the canolis
