Let me start by saying: I’ve had good service before. I’ve had great service before. But nothing—and I mean nothing—could have prepared me for what happened at P.F. Chang’s in Troy. It all began like a typical evening. We arrived, a little hungry, a little indecisive, but craving something flavorful and familiar. The hostess smiled warmly and led us to our table. Everything seemed standard… until Gene appeared. Gene didn’t just walk over to greet us. No. Gene glided in—on a unicycle. Dressed in full server uniform, but with a black silk sash tied around his waist like some sort of culinary ninja, he maneuvered between tables with the elegance of a circus performer and the confidence of a man who’s seen things in the restaurant world. “Welcome to P.F. Chang’s,” he said with a grin that could charm soy sauce into turning sweet. “Tonight, I’m not just your server. I’m your guide on a journey of flavor and finesse.” We laughed. He winked. And thus began the most epic dining experience I’ve ever had. Gene knew the menu like he wrote it himself during a dream about achieving wok perfection. We trusted his recommendations entirely. Ten minutes later, he returned—this time juggling three fortune cookies—and announced, “Your appetizers are prepared. The journey begins now.” And sure enough, Gene delivered the Dynamite Shrimp and Chang’s Chicken Lettuce Wraps while balancing the tray on one hand, still on the unicycle. As he served each plate, he described the origin of the dishes with such enthusiasm that we were half-convinced he studied under P.F. Chang himself in a secret monastery atop a Sichuan mountain. By the time the Mongolian Beef and Crispy Honey Chicken came out, Gene had choreographed the delivery with a Bluetooth speaker tucked into his apron, playing dramatic orchestral music. I swear he spun once in place before setting the plates down like a magician revealing a trick. He made water refills a performance, refilling from three feet above the glass with zero spills. One table nearby clapped. Gene bowed. The grand finale? He brought out dessert—a towering slice of the Great Wall of Chocolate—balanced on the tip of a katana he produced from somewhere (okay, probably the kitchen), all while quoting Confucius: “Our greatest glory is not in never falling, but in rising every time we serve.” I’m not crying, you’re crying. From the very beginning of our meal until the last moment we left the restaurant, Gene elevated the entire dining experience with professionalism, warmth, and genuine hospitality.
Gene struck that perfect balance of attentiveness without ever being intrusive. He was quick to greet us with a smile, made us feel welcome right away, and guided us through the menu with impressive knowledge and helpful recommendations. You could tell he wasn’t just “doing a job,” but truly cared that we enjoyed ourselves and had the best possible experience.
Throughout the meal, Gene anticipated what we needed before we even had to ask. Our drinks were always refreshed, our food arrived perfectly timed, and he checked in with us at just the right moments. He was personable, engaging, and carried himself with the kind of positive energy that made the whole table feel comfortable and well taken care of.
On top of the fantastic service, Gene’s genuine kindness stood out. He made excellent suggestions for sharing dishes, explained menu items in detail, and even remembered small details about our preferences, which made everything feel personalized. It’s rare to find someone in the service industry who leaves such a lasting impression, but Gene is absolutely that kind of person.

Read moreI like to think of myself as a person who always understands different situations and I always review businesses when they exploit great service. My experience here it PF changs was the most disrespectful experience of my restaurant life. We arrived at 5 PM and had a party of 12 and were told we would have to wait 30 minutes for a server. Not to mention the restaurant was at about 10% capacity with multiple workers standing around. When we came back at 5:30 to be seated, other parties were walking in at four and six counts and being seated right away. I got up and asked what is going on and was told we don’t have a server, but they were seating tables left, and right that were coming in. I asked for a manager and Janelle Fulco came out and said we don’t have a server, after we have been waiting for 30 minutes and there were 20 tables available. Furthermore we said we would split into two tables. Janelle Fulco was extremely unprofessional and nasty to my face in front of my kids and family. I then asked to speak to her supervisor what she just turned her head and walked away, I don’t understand why a restaurant would not want business from a party of 12 when they were dead. For me to take the time to write a review like this means it was the most disrespectful customer service I’ve ever seen. I will be reaching out to the owners just so they know what type of person is running there restaurant when they aren’t there. I’m sure they will be upset that the turned a $1500 bill down because they didn’t have a server when they were seating tables while we waited for 30-40 min when there was NO WAIT.
