Tried Gustav's on a whim and I'm so glad we did. We sat in the bar and started with a drink. I'm allergic to agave, so that means no tequila. They made they're Blood Orange Margherita with Vodka and sugared the rim for me. It was amazing!!
Then we ordered. I chose the Sausage Duo with Smoked Bier Sausage and Wild Boar Sausage. It came with pineapple sauerkraut, braised red cabbage, homemade stone ground mustard with a kick, and warm German potato salad. The sausages were divine. The fruit mixed in with wild boar was interesting until you paired it with a little mustard and red cabbage. The combination brought out all the flavors of the sausage. It was delicious, and I'm not a fan of cooked cabbage. The smoked bier sausage was divine, and the pineapple sauerkraut was so wonderful I ate most of it on its own.
Hubby ordered Green Apple Pork Schnitzel that came with warm German potato salad. He receive 2 large, thin, coated and fried pork portions with matchstick green apples and a phenomenal sauce over them. Large portions with amazing flavor profiles. I tried a bite of pork with no sauce and the flavors in the breading and meat could have stood on their own. When you added the tartness of the Apple it balanced the sauce and pork beautifully. Hubby ordered a grapefruit hefeweizen to drink with dinner. 32oz. I'm not a big beer drinker, but that was a good tasting beer. I could drink a 16oz beer of that.
We ordered dessert to go, along with a couple Bavarian pretzels. I ordered chocolate mousse and hubby order Apple struedel. The mousse was decadent, creamy, and smooth. The struedel, what little I got to taste, was flaky, tender, well balanced, and had beautiful flavors.
The staff... they were fun, funny, and having fun. It wasn't faked. They truly enjoyed what they were doing and it showed in how they interacted with the customer and each other.
If you're in the area and looking for a great place to eat dinner, I highly recommend Gustav's. Well worth the money. Dinner for 2 with drinks, desserts, and pretzels still came well under a $100 bill, that it left a nice tip for the gals who...

Tonight, our server was Jess, and she was wonderful. But then again, the service here is usually spectacular.
My husband and mother-in-law, split the pork knuckle and found it to be very flavorful! I indulged in the potato pancakes (falling off of the Mediterranean diet, yet again), but had a salad in good faith. ;-)
We understand that Gustav's is under new ownership. From what we've seen so far, we continue to be happy customers. This restaurant is a Vancouver staple, and we will continue to enjoy dining here.

Per Gustav's norm - food and service has remained consistent- which is honestly appreciated.
We (party of four) arrived at around 5:15 on a Sunday evening and they were busy. We were seated promptly and our order was taken in a timely manner. Considering that a party was in full swing in their banquet room - service was good and our server never missed a beat.
Jess was our server and she did a great job checking in and making sure that we were satisfied = we were.
Tonight's dinners included: Cabbage roll, served with gravy and mashed potatoes - Pork & apple Schnitzel served with German potato salad Sausage plate which included two sausages, sauerkraut, red kraut and German potato salad. Everyone was satisfied with their choices. We shared the brownie dessert, which was huge and had the perfect amount of sweetness.
Ella was our server today and she was just fantastic. She was there when we needed her, friendly and accommodating.
My mother in law had the cabbage rolls and throughly enjoyed her meal. She usually doesn't eat too much, but she was able to eat almost her entire meal! It was that good! Read moreTried out Gustav's today under new ownership. Menu a bit smaller but still many of our favorites. The Rosemary bread is fabulous as always. Glad they kept that. As well as fondue. Yum. Other entrees were decent just not the wow factor they used to be. We tried the meatballs w spatzel, the Reuben, potato pancakes and lentil soup. I miss the old sausage and lentil soup. The current one w bacon is ok just not the flavor bomb the old one was. We had a bit of a surly start. Wanted to sit on patio but was told we couldn't move two umbrella tables together. No shade besides umbrellas so we opted not to sit outside. Interesting that when we left no one at all was on patio. It would not have been an issue for us to push all six tables together to provide some shade. This is a really underutilized portion of this location. The hostess seemed unhappy with us for changing our minds about the patio but she didn't warn us about the no shade and didn't seem eager to provide us with any options. We felt like a big inconvenience to her. Not welcoming at all. The waitress was nice and did well. Keg blew on my beer and it took a really long time....one reason we had hoped to sit in the bar. Service there usually faster from prior visits. Another issue was that once we changed our minds to be inside they had to set a table for us but once entering the seating area all the tables were pre set. And it was empty. It was 4:50 pm. I can't see how it took any time as setting of a table was not necessary beyond pouring water. All which could have been done while seating us. Food was solid but not spectacular when we just didn't feel welcomed. Will think about it hard before going back. My husband who hadn't been with us for the first seating issue even guessed which hostess was unwelcoming. She was looking sour to other guests as we left.
