Got there at 7:00 PM (close @ 8:00PM) all that was left was brisket and sausage. Which was no problem due to the fact that I wanted the brisket. I got the large gut buster dish (pricey). The food is served in styrofoam even if you eat there. What I didn’t know was that they would pile everything on top of each other. Corn chips, beans, onions, pickles, brisket. Just one large pile of food. I used the plastic fork to try to find the brisket under the mush of beans only to be disappointed. “Enter where’s the beef lady”. Only a few cube cut pieces of brisket made it to my styrofoam container. I asked for the long cut, so there was a disconnect from the time that I ordered to the preparing the food. Which was like 5 seconds. Ok, so I will say that EVERYONE working there was nice and polite. But the chow they serve was not quite what I think a BBQ meal should be. See picture, it’s just one big pile of, well, food. Hard to taste the flavors of the BBQ brisket when it’s mashed in with other food that should be just that, sides. No BBQ sauce bottles at the tables. No tangy or sweet or no hot n spicy. The bread was just plain ol grocery store bread (2 pieces) no thick cut Texas toast I guess. I kinda feel I got rooked for nearly 20 bucks for a BBQ that I thought was going to be awesome. We only heard about this place from the local folk here in Waco. Maybe this how they prefer their BBQ? I guess each food joint has their unique style of food and atmosphere and this place is no different, heck, the place has been around for long time. But it’s not my style of BBQ.

We went here for dinner at around 7pm. They close at 8pm so we went in expecting the meats to be a little dry. When we got there it was really busy. There’s was a line to order but it went by pretty quick. All the tables and booths were taken up luckily one opened up when we were ready to sit. I think this place wants to maximize the amount of people that can dine but all the tables sit 4-8 people or more. Most groups were 2 people so the 2 people would take up an entire booth designed for 6 people or more. I would recommended Viteks to get more 2 people sittings. The food was in fact a little dry but it was still really good. The flavor was great and I know if I return it’ll be during the lunch meal and I can have higher expectations on the freshness. I recommend going early since when we went they were almost running out of brisket, they were out of ribs, and green beans. So the earlier the better. The Mac n cheese was amazing though. Everything tasted great. I feel if I went there at 11am it would easily get 5 stars.

Long time local favorite with tasty meats, good sides and creative entrees. The half Gut Pak is my go-to because I don’t have to choose just one thing. Starts out as a hand full of Fritos topped with cheese, fresh sausage, a mound of chopped brisket, pickles, onions and jalapeños. Oh and because none of that combines on anyone’s healthy eating plan, they top it off with a slice of white bread. My friend got the brisket tacos which were just what you’d expect with sliced brisket inside a tortilla with the fixins. You get to choose the traditional BBQ sides of mac n cheese, slaw or beans. She felt like the brisket was a bit dry however there was zero left on her plate when we finished. Comfortable seating area with with a mix of college kids, business people and families. TVs were playing the Masters and they serve beer. I recommend Vitek’s for good BBQ anytime you’re through Waco.

I come here to write this review today in hope to grab the owners/manager's attention. I ordered a brisket potato Spud with just butter and cheese on it. Pretty simple order. I get home 30 minutes later after picking up my to-go order and it's turkey. Okay mistakes happen I get that. I don't know who orders a turkey Spud but I guess some people do. So I call the store and let them know that my order that I placed almost an hour ago got messed up . I was given the option to come back to the store and have my order remade. So I asked well since I live about 15-20 minutes away and traffic's really bad what about another day I just come back and get my correct order that I paid for . They said well no we would have to give you 15% off your next order we can't do that . So you're telling me that you messed up my order completely and at a future date you don't want to make it right? What kind of customer service is that? So needless to say 20 minutes later and 10 red lights and some traffic I made it back. I told the workers there that their manager was not very friendly and they all kind of nodded their head as they know. But when I got there in person I had to ask again to confirm what I actually heard about the 15% and I'll let them know that I thought that was pretty odd. Never got an apology from the manager or thank you for coming back and or anything. His name is TC. I'll just go into Rudy's or Terry blacks in Waco from now on. After being a customer somewhere for 15 years or so ,a 15% discount on a mess up you made come on now ??? This just comes down to the principle. The food is good, the workers are nice but the manager definitely needs improvement. From on the phone I could just tell he is not a people person. And then in person confirmed it to me even more because he was not man enough to tell me his real name. I'll just remember this whenever we need another catering for any Baylor event or so forth. If I was the owner of the restaurant I would definitely look at our policies on messing up orders and replacing them for people. Maybe that's not TC's policy that he created but the way he delivered the message came across was very rude... When will companies finally take responsibility for their mistakes and make sure the customer satisfied it instead of saying oh we're sorry we are incompetent

To answer your response: I offered to send pictures when i called on the phone to show you that my order was incorrect because i understand that people lie. Why was this not sufficient enough for you? Don't blame the "new" employee. She was the nicest one there and was only one who seem concerned. , I'm complaining about the manger and his lack of customer service at the time of the event. Where is this sign located to check your order? That's sad you have to rely on YOUR customers to make sure you do your job right. I don't see that sign at any other restaurants. You had like 5 people in store eating and employees twiddling their thumbs so i hate to see when it gets busy. Thanks for upgrading my order on the overcooked potato with dry brisket after my 1 hour debacle trying to get my right order. You figured with bigger and better BBQ places opening up in Waco that you would step up to the plate. Our next catering event we will go with someone else for BBQ.

P.S I would have ate the turkey if it did not taste like luchable meat from a...

Lunch at Vitek's in Waco, TX a couple days ago. I made a similar post to this one about a BBQ restaurant and received a recommendation to try Vitek's if I were ever in Waco, TX.

I had a lunch scheduled with a friend on a day that they were open so we met and tried it out.

First off, the location was great being on the northbound service road of Interstate 35 made it convenient to drive to as well as see when navigating.

First impression was great, the parking lot was more than large enough for the size of the building. The outside was well maintained and the signage contrasted the surroundings making it clearly visible.

Ordering was straightforward with laminated menus so you know pricing does not vary daily and specials must be written on disposable signage. Inside the staff was friendly and helpful, cleanliness was great even after lunch rush at 2pm and restrooms were tidy.

We opted for sliced brisket, pulled pork and jalapeno sausage for the meats, banana pudding and pecan cobbler for deserts. My friend and I prefer not to have bread or overload our meal with sides when having BBQ at a restaurant that has good quality meat selections. This meal is mostly about the meats so keep the sides light.

Brisket- The bark was thin and flavorful, the smoke ring was there but not deep and the remainder was lacking flavor. Each bite required the bark otherwise sauce was needed. Their sauce was sweet and would compare to KC Masterpiece.

Pulled pork- Moist and flavorful throughout, our portion did not have much of the crispy exterior that I like but overall it would rank high for consistency and flavor. Sauce was not needed, I tried a small amount of sauce and it was good together.

Jalapeno sausage- The grind was coarse but still smooth so the flavors were easier to pull. This was better than most sausage I have tried at other BBQ restaurants and food trucks. No sauce needed as the flavor, temperature and consistency was spot on.

Pecan cobbler- This was a thin sheet pan pecan pie cut into squares with additional pie filling made separately. Making it this way kept the ingredients from mixing so the pie crust and pecans were crunchy and the filling was consistent. I would pick this option over traditional pie any day.

Banana pudding- Traditional basic banana pudding with a few wafers tossed in and no banana slices. They kept this simple, made when ordered so the...
