This is a very small shop, and I think most people buy by the slice, although they will make a pie. I usually prefer to get pies vs reheat of slices. Prices are not cheap. I almost walked out after looking at the case because I knew the crust was not going to be what I look for in a NY pizza! But my husband and I decided to try a few different things and share. They have two styles: NY and Roman (which is more like focaccia crust ..very light and airy). They state that they buy local and organic when possible. We tried the margherita focaccia, the bianco white pizza, garlic knots, and eggplant involtini. Let's start with the good - garlic knots were excellent, and very garlicky! The roman style was good, not great, and this particular one was served room temp with 'fresh' mozzarella on top. The mozzarella was very chewy - not the texture I'm used to for fresh., but overall, this roman style was ok. The bianco? Crust wasn't NY by any means and a bit too thick. They had too much cheese toppings on it, which overwhelmed the pizza. We both weren't fans. The eggplant? It was weird - had a funny taste to it which I couldn't peg. Had my husband try..and he agreed, but neither of us could figure out what it was. Texture and crust was good, but very off-putting taste. Read moreI've been going almost every week (sometimes 2x/week) since they opened their door last October. I hadn't had any pizza since I moved to Austin from New York City, Until I found Baldinucci. And I'll say that their pizza would be much more delicious than many pizza places I went to in NYC.
Roman style is a good balance for me--doughy as a deep-dish, but not thick or greasy. Still crispy as a thin-crust on the outside. They have a wide variety of selections--veggies, meats, and anything in between. Ingredients are fresh and combined wisely. My personal favorite is their Prosciutto Di Parma, which combines Prosciutto with arugula and is drizzled with Balsamic vinegar. (Very flavorful!) Their gelato is another star--great consistency, great flavors esp. the nutty ones. Pistachio is my favorite. Their store interior design is very delicate, which reminds me of the quality Italian shops and bistro restaurants that you would find in the Eataly Mall in LA/NYC. I've recommended quite a few of my clients and friends over since I work very close by. They all seem to like their salads.
