This is the one I was looking for. Crunchy and sharp edge of raw garlic coated and enriched by pork oil. Soup is really hot upon serving, gradually reducing heat accordingly as the raw veggie toppings melts and emitting umami water, which result in enhancing the taste of soup.
Noodle and pork cha siu is with not that outstanding characteristics yet still is masterpiece in Japanese “Jiro-style” ramen in Vietnam. You may find all other Jiro-style ramen in other places are all just posers. I vote this ramen stall as No.1 ramen in Hanoi city!
//adding notes.. as of Feb2025. I visit this ramen shop everytime I visit Hanoi. But recently I sense that the taste is no longer the one I loved. Especially Jiro-style ramen and Oyster dipping ramen, the taste has been surprisingly dropped. Heyyy Haruki san… it’s not the matter of chasing and producing monthly limited ramens but you should go back to your original and enhance flavor of grand menu. Otherwise one of your old fan will be leaving.
//adding notes.. as of Mar2025. Business trip to Hanoi again so I visited Haruki again. Ordered "Guts Ramen" (my 5th time trial). Very regret to say that the quality is dropping. I could not find texture of pork broth in the soup. And the veggie topping is no longer cooked, felt more like eating raw. Noodle also is no longer dedicated noodle, it's reuse of dipping ramen. I think the owner lost passion towards ramen... I rated 5 star in the first place but now inevitably I had to decrease...
Read moreCame upon Haruki by chance...The ramen here are different than the ones we usually had back in home country...perhaps due to these ramen are made according to specific region in Japan. We tried Abura Soba which is quite good , and Oyster Ramen which taste a bit too salty side. The portion are rather small for men but maybe the ladies will be very happy with that kind of portion. We can see small rice bowl perhaps that can be ordered to make Ramen Teishoku. What really puzzled us the Chashu which kinda strange.. hmm usually chashu had this wide circumference but here are chopped chasu. The Ramen oyster might need additional kamaboko slices. Pity no stamina Ramen offered here...but overall...
Read moreOne of the best ramen we’ve ever had, not just in Vietnam but anywhere. The oyster ramen is our favorite- surprisingly buttery with a generous amount of oysters. The seafood & pork ramen (weekend only) is also yummy- the broth is quite salty but it comes with vinegar and hot water that you can add. The food is not your typically Japanese ramen but still very delicious and satisfying.
The service is fast, waitresses are nice and speak Japanese! The decor is quite plain but the food way makes up for it. We saw Japanese men and family eating there so guess the food is either authentic or gotta taste quite nice.
