Phở Phú Vương — Restaurant in Ho Chi Minh City

Had my first meal in Vietnam at this pho restaurant, recommended by my Vietnamese friend — and wow, it was insanely good! The broth looked so clear but was packed with flavor, so light yet rich. The beef was super tender, and the vegetables — especially the beansprouts — were really fresh.

I honestly can’t remember exactly what I ordered (wish I knew a bit of Vietnamese since the language barrier was real), but luckily, I had a friend to help. The atmosphere was pretty neutral. Nothing too special, but nothing bad either.

One funny thing, though, there was this person sitting at the table in front of me, just staring. Usually, when you catch someone staring, they look away, right? But this guy didn’t, so it kinda turned into a silent staring contest😭. Not sure if that’s a cultural thing or just a one-off experience, but it definitely caught me off guard.

I have been here since I was a kid; it’s probably still my go-to place to get phở in Saigon. The broth here is pretty unique in a good way unlike other places.

I came here twice in July 23, once in the late evening, and the other in the late morning. The owners are 2 sisters and each of them take turns to manage either the day or the night, so the ambiance as well as service are a bit different depending on when you come here.

My concerns are sanitation and portion sizes. When I came back after 4 years, the quality has slightly changed. Also there was a big fly in my Pepsi, which was concerning. The portions have gotten incredibly less; the “normal-sized” bowl they have is like the size of what a child would eat. Based on the high prices, I would say it’s quite unpleasant. One of the best bowls of beef noodles I've had so far! The bowl comes to my table HOT! The apetizing aroma is fighting the heat, hence BE VERY CAREFUL! 🤭🤭 The broth is rich and flavourful, yet clean-tasting with no gamey aftertaste – truly authentic. The beef is tender and well-prepared, making each bite satisfying. The place itself is spotlessly clean with a humble and comfortable ambiance that makes you feel right at home. Staff are very friendly and welcoming. Definitely a top spot for beef noodle lovers!
