"Marlin" Restaurant is nestled in the heart of the Longacres area, adjacent to the once prestigious Lusaka Club. It is also a dining experience that leaves a mixed impression. The decor, while maybe aiming for a cosy ambience, feels outdated and needs a refresh. The open kitchen concept, while possibly intended to showcase culinary artistry, inadvertently fills the dining area with a cacophony of aromas, some enticing, others less so. The menu (by the way, printed with some typing errors) offers a diverse range of options, but the execution is inconsistent. The rock shandy lacked the expected zest, and the pancakes were overly sweet, lacking the depth of brandy flavour. The minestrone was passable, while the self-serve salad bar raised hygiene concerns. However, the pepper steak emerged as a standout dish, delivering on flavour. The dimly lit interior, while perhaps intended to create an intimate atmosphere, instead cast a gloomy pall over the dining experience. Service was attentive, but the ambience exceeded expectations for a restaurant of - said by locals - 'calibre'. There was plenty of staff milling around, with no sign of any co-ordination. Our waiter started on the right note, humorously anticipating pepper steaks all round. He then proceeded to get the order hopelessly wrong. I got chicken curry instead of fish curry. I stuck with it as I was hovering between the fish and chicken. A bit too spicy for my palate, but tender and delicious,
The other two did order steaks ... and were served flattened fillet, no doubt beaten with a tenderising mallet, and so thin that anything more than a sear went straight to well-done.
Oh, and our waiter brought the second steak to the table with a puzzled look then swooped it away without explanation. After going to the open kitchen to find out what the heck was going on, we discovered that he thought the portion was a bit stingy, so had taken it back to get the chef to cook another portion.
A saving grace for me was that the Dom Pedros were veritable milkshakes, but our sense of humour failed when they had run out of milk to serve with the coffee.

The cuisine was and absolutely delicious! The T-Bone was cooked to perfection, and the flavors were savory. The portion sizes were generous, and the presentation was visually appealing.
