Yesterday I visited Promenade Mall Vasant Kunj for a movie. Prior to that I ordered a mutton kakori roll at the Khan Chacha outlet in the food court as it is a favorite of mine.
However, when I took two bites I discovered the meat was raw. It didn't have the fine ground meat texture of a kakori kebab either. I took the roll back to the counter and spoke to the salesman. Instead of apologizing and trying to grill the food better he tried to advise me that the roll is supposed to be that way. When I told him not to think a customer doesn't know what he or she has ordered and is eating he needs to replace this. He then suggested I take a speech kebab roll which would be well done. I insisted he either fix my order or refund my money. After that he produced another roll this time better cooked but not the kakori I know.
I realised since this is a takeaway they obviously don't have a tandoor In the limited kitchen area. Precooked kebabs are heated in microwave or OTGs at best. But getting a fresh kakori to well done is not happening.
So I would suggest that customers don't order meat products which require a tandoor or proper grill to cook. Most of these places are using frozen food which may also not be fresh.

A few things one should understand: if you want the best Khan Chacha outing, then you should head to the one in Khan Market. You're in the mall food court for a bite, not a gastronomical experience. Also, don't bother ordering biryani. Just go what they're known for (and what's more suitable to expect at a food court) - rolls. Chicken Tikka and Mutton Seekh rolls were quite good. Maybe not the OMG level they have been known for previously but still very decent. They have veg rolls too (Paneer Tikka, for eg). Prices are decent for the location. Read moreKhan Chacha has a tagline of serving rolls since 1972. While their rolls are good, they also have other dishes, including biryani, kababs, nahari and even haleem. We visited in May, and discovered that they had introduced haleem for Ramzan, but because it had proved so popular, they’ve kept it on for a little longer. It was delicious, served with onions, green chillies, limes, and a generous garnish of fried onions. You have to order a roti separately: we tried the taftan, a thick, spongy roti like a bakarkhani but without the sweetness.
