I had high expectations of the pies that I purchased because I saw them on national TV and thought they would be a good bet for a great pie that I could buy a locally. Unfortunately I was very saddened. 1st off the cross was extremely thick and I believe they should have used a combination of lard and butter to make their pies to make them more flaky but these were hard and tasted like they'd been sitting there for a long period of time. I can't say much about the interior of the pies as well because both of the pies that I purchased were or should I say had very little filling inside. I felt like the filling should have been at least a 3rd more in both the Apple pie and also the coconut pie I purchased. On this trip, I pre-ordered the blackberry pie for the family, a miniature chicken pot pie for myself, a miniature spinach quiche and a miniature cherry pie for my brother. The crust is still as flavorful and flaky as I remembered, from my first trip, when only the Gainesville location existed. With the pre-order, you get to select your pickup time. My items were packed and ready when I arrived. The shop smell of fresh baked goodies, even through my mask. The young people working in the front of the store were very pleasant, greeted me promptly and quickly retrieved my bag from the rear of the store. We had read a few articles about this business and wanted to learn more. We were warmly greeted. We asked questions and learned that the owner was inspired by pastries she had tasted in Europe. With some help from her mother-in-law she perfected a crust recipe and decided to start this pie business. She uses fresh ingredients and locally grown fruits and vegetables in her pies. We were impressed with all that we learned and we could not resist. We ended up buying chicken pot pie and apple cranberry pie and skipped our planned lunch at the restaurant.
