I've been bringing both axis deer and white-tailed deer here for years. Absolutely the best people in the business. Professionally run and always a smile and a thoughtful discussion about the outdoors.
As per the quality of the processing, Eddie's is by far the tastiest. And I've tried every processor within an hour drive. I mainly eat Axis Deer. And with this precious meat, I am picky. This place adds just the right amount of seasoning to the sausage -- it is so good that my kids eat the breakfast sausage faster than I can hunt it. And the processing is CLEAN. I mean really clean. I cannot say that for all the processors around here. Given how systematic they they are with their conveyor belt and cold storage (which is really cool to see--so you might ask for a peek), I have no doubt that the same Axis deer I shot is the one that ends up in my freezer. This is especially important to me because I use non-lead bullets and don't want my meat mixed up with someone else's.
