I moved to Idaho from the 4th largest city in the US and am still exploring my new home. I'm very into local but it still has to be fantastic. I learned about this cheese shop at the Visitors Center and looked forward to trying local cheese (and hoping to replace my Tillamook which is regional but not as local). I visited the day before St Patrick's and the young lady working the store by herself was busy preparing for the next day's parade. I have made several unripened cheeses myself and had hopes of discussing how the local milk affected their cheese and so forth and trying some examples, as one does at the Tillamook tour or a winery tour. Unfortunately my hopes were not to be realized. I was pointed to the case where a VERY generous free 2lb block of cheese could be selected for mentioning the Visitors center, and then, after asking, waved to the front for the two kinds of cheese tasting available, Havarti and Pepper Jack, I think. I tasted on my own, both being variations on a theme of light flavor and very creamy. I perused the cold cases looking for a few items to make a cheese board. Everything seemed very similar, even the medium cheddar looked really creamy and not aged. I bought 2 blocks in addition to the free block. Had I been able to learn more about the cheeses or taste the cheddar or something different than mild and creamy, I would have purchased more. Even the ghost pepper cheese is very mild with just a smidge of heat once the cheese has warmed a bit. I'm happy to have checked it out and will share with the bookclub this week but Glanbia will not have a regular place on my cheese board. It's boring. P.S. The coffee shop across the street is fantastic and friendly service with time to answer questions about their in-house...
Read moreMy husband and I stopped to get coffee with friends yesterday, at twin bean and noticed the cheese shop on our way back to our car. I grew up in a small dairy town in California so ive had really good fresh cheese and I also love pepper jack cheese, when we went in we were greeted very kindly offered samples and chatted a little with the young lady who was working at the time. We each sampled some of their ghost pepper cheeses and I fell in love. (Sorry hubby but id leave you for this cheese it was that good) so we returned this morning after getting paid and doing our grocery shopping and we bought a block of swiss (which I normally don't like swiss) but I had sampled this and it was good! So we ended ended up with two blocks of ghost pepper and one swiss. The lady there was very polite and nice, even let us sample some of the dried cheese which I had never heard of before (it tastes like cheese its minus the salt) and probably a good gluten free...

The employee was incredibly rude as soon as we walked in. I was in shock in response to her rude behavior about the 3 of us coming in. We ended up turning around...
