One of my new top 3 pizza places in Sydney!
Funguy ($26) - truffle cream, mixed mushrooms, mozza & thyme - sometimes white pizza sauces are too heavy, but the truffle cream here is quite light yet smells very good and enhances the shroominess of the whole pizza. I love the cheese - I think there were chunks of pecorino in there - which hold their shape and offer some bite, not just stretch like mozzarella does. And the sprigs of dried thyme are genius - the herb adds warmth, earthiness and also helps cut through that cheese and cream a little.
Gamberi ($29) - grape tomato, prawns, stracciatella, rocket, chilli oil & almonds - I'm not the biggest fan of prawn (or seafood more generally) on pizza as it's liable to be squeaky and overcooked and I just don't think seafood is showcased best through being dry-baked, but this one was good. The marinara sauce is unlike your average marinara sauce - it has a natural sweetness from grape tomatoes - a very fresh, bright taste, not a dull, one-dimensional herby old tomato flavour. The prawns were fine. The rocket blended in softly rather than asserting itself with bitter dominance. The slivered almonds were a nice touch. Admittedly it was a teeny bit soggy from the amount of sauce, but I also think the moistness tied this whole thing together - it also preserved the moisture and juiciness of the prawns and gave them a chance to infuse their prawny essence into the sauce and rest of the pizza.
