I took a class "sharpening on wet stones" with Aaron this morning. It was a great class. Booking online through their website was easy and I liked the fact that they provided a lot of time options throughout the day so I could easily align it with my schedule. Aaron was friendly and knowledgeable. Before we started he assessed where my skills level was and adjusted the class accordingly. We spend a little bit of time in the beginning on general overview of different steels and grinds and what sharpening is all about and after that most of the time was spent on practical part. I came to a class with some level of priore knowledge and skills which I gain from watching YouTube tutorials. So I mainly wanted to see someone good at sharpening in real life, to try different stones and get an assessment of my own skills. And I got exactly that. Aaron was very pleasant, didn't hesitate to give me feedback and was also curious and approachable.
And I forgot to mention that their facility is amazing, it's like a "toy room" for knives and sharpening enthusiasts.
Thank you...
Read moreI've been looking to invest in my first Japanese knife for a millennia, but wanted help! Knives and Stones のおかげで助かりました (to the rescue).
The experience was amazing. The guy's knowledge and way of helping me figure my way through was off the charts amazing. He had me chopping potatoes with different knives to figure out what felt right to me and explained the difference between each one.
They worked with my budget, and—get this—actually talked me out of spending more than I needed to! The Hatsukokoro x Yoshikane SKD Nashiji Santoku is my new kitchen buddy.
What stood out most was the service; it’s not just ‘buy a knife and leave.’ I’ll take the knife in a couple of months for a professional sharpening. I'll thinkg about my next purchase based on what else I’ve found myself needing.
This place isn’t just a shop; it’s where cooks of all levels can learn, explore, and grow. Can’t recommend it...
Read moreHaving exchanged a number of very useful emails with James, I visited the shop on a recent visit to Sydney. We discussed whetstone sharpening equipment (particularly to support my recent online purchase of his Czar sink-bridge, stones, care of stones, sharpening techniques and finally knives. My visit lasted 2 hours and I enjoyed the exclusive attention of James and a thoroughly enjoyable and interesting time. I walked out with a beautiful Masamoto knife, sharpening equipment, some of which James posted to me to reduce the weight I had to carry. Finally I left with a great deal of information and confidence that I was far better prepared to continue with sharpening of both single and double beveled knives. James has a great range of Japanese knives and sharpening equipment and a great knowledge to impart and I can only recommend people consider Knives and Stones when...
