I had the pleasure of working with Jane and joining several of her classes in Provence this summer. The classes begin with a tour of the market where you have the opportunity to meet the vendors and listen to Jane tell beautiful stories of the specific cheeses, produce growers and history of the region. After the market, you head back to her beautiful kitchen and learn all of the chef techniques and see various preparations of lamb, duck and fish and of course the favorite Provencal summer recipe of fried goat cheese stuffed zucchini flowers! It was such a treat to meet all of the wonderful and worldly people who take Jane's classes and watch everyone come together through the wonder of cooking and eating. Read moreI had a wonderful cooking class with Jane this week. She planned a balanced menu and then talked us through everything she did, giving us hints and tips along the way. We were put to work, prepping the veggies, blending artichokes for a purée and making a pastry base for the mushroom tarts. We took advantage of Jane's sunny little outside space to enjoy a pre-lunch aperitif with local rosé wine and delicious anchovy dip on crusty bread. The meal was then enjoyed in Jane's charming kitchen with wine and conversation flowing. Jane showed us how she made a delicate sauce for the poached pears, and she reassured us that all her recipes could be found on her website. Read moreJane asked us to join another group class the day before ours was booked and we agreed. It ended up there were 9 of them and 4 of us so it was a very large group and a bit chaotic, at first, but as we all made our way through the market with her energetic and friendly guidance, we felt happy to meet the others and learn about the area and the food! Our menu was amazing and we all participated in the prep, then we students got to go outside on the patio and enjoy the Apero while Jane and her assistant finished the meal. So, we got to have a special time mingling on a beautiful fall day in Provence, then enjoy an expertly prepared meal together with our new friends. It was fabulous!
