My friend Lwam had told me about this place for quite some time. I can’t really figure out why it took me so long to finally try Café Stifanos. I usually love checking out new spots, it excites me. I think Lwam knew I’d fall in love with this place. Next time, I won’t hesitate as much as I did. This place definitely feels like coming home to me. I’m not entirely sure what the whole menu offers, my eyes are always locked on two things when I’m here, the kitcha and the foul. Let me briefly introduce you to kitcha. My DNA practically contains this heavenly piece of pleasure. Most weekends, my mom used to serve it to me and my siblings. It’s a real gem, a staple in Habesha households around the world. Kitcha is a type of flatbread, cooked free-form in a hot pan until one side is done, then flipped and cooked on the other. A slight burn on each side is common. It takes the shape of the pan, much like a pancake, though there’s no actual relation. It’s most often eaten in a dish called Kitcha fit fit, flavored with a kind of spiced butter called Tesmi and Berbere seasoning. I feel like I should be able to explain this better, but I haven’t quite figured it out yet. Honestly, I had to borrow half of this description from Wikipedia just to make it make sense. This year, I’ve decided to learn more about Eritrean cooking from my mom, how to make Injera and some classic stews. I think it’ll be a great way to spend time together and also to deepen my understanding of my heritage. So much of Eritrean tradition revolves around food, and I’d really love to know how to cook the dishes I grew up with, and maybe pass them on to my own kids (they don’t exist yet, just to be clear). Anyway, I’m getting off-topic, and honestly, a bit tired of writing. At the moment I’m celebrating midsummer at my friend Ida’s family place north of Stockholm, and I should probably go see if I can help out with something, that’s what you’re supposed to do, right? But to finish this review, try the Kitcha and the foul. You probably won’t be able to finish it all in one sitting. Either share it with someone, or plan to visit twice. It was amazing kitcha fitfit, both with tsme & without, and the foul was delicious as well. Also, the tomato, onion & jalepenos sauce was so good. It was probably the best kitcha I’ve ever had honestly lol. Thank you to the owner & her daughter, beautiful family with the most fresh food.
