Heard of this place opening a few weeks ago I think it was. Never heard of it before hand. Come to find out, these guys have been around for a while and was unfortunately a lost product of covid. I see that covid has not phased this and they are in full swing. Let's get the run down started. Walking up to the place, it's quant. Not in your face but you can tell a restaurant is there. Now, walking in, we were immediately greeted by an employee who said they were going to get a waitress right away. Didn't take long for someone to come up and seat us. However, in that amount of time we were able to get a quick look around. First thing I notice about the asthetic was how fresh and modern western it looked. It has that ranch house feel. Pictures of a highland cow and an elk on the wall. The very next thing we noticed was the amazing looking tables. These tables look like something I wanted to take home myself (they're lucky I didn't!š). They were absolutely stunning and fit quite nicely with everything from the pine siding on the walls to the hanging table lamps. The tables were set already and inviting to eat a filling meal. We had water waiting for us immediately and our waitress was prompt to get to us and take a drink order. Once we handed in our drink order she did inform us of a mishap they ran into tonight with their head chef. Apparently their head chef just upped and peaced out leaving highschoolers on the grill and making the food. Well that didn't worry us. We decided to still give this a try. We went to order appetizers and she informed us of what all they were out of for the night. This made it easy. We order the jalapeƱo poppers which were really yummy. I think they could have used a little roasting to add that next level of flavor they were missing but they were exceptionally tasty. We also ordered a Buffalo steak slider for our 2 year old, I had to try it myself and it was really tender, juicy and tasty. The Sriracha mayo it came with added that next extra flavor profile and a slight kick to the taste buds. My wife ordered the cordon blue. Wrapped in thick bacon and cooked through, it looked juicy and flavorful. The side salad she ordered with it was one of the best salads I've seen. Nice summer lettuce, with kalamata olives, artichoke heart, sundried tomatoes, roasted garlic and your choice of dressing. Looked fresh and crisp. I ordered the jalapeƱo popper burger. This burger was cooked to perfection with fresh lettuce and tomatoes and a hot juicy, bacon wrapped, stuffed jalapeƱo popper. This is where I leave something that did bother me slightly. The burger patty wasn't as thick as I was expecting and did not completely fill out the bun. So as I was getting to the end of the burger, I ran into an issue where it was just bun, lettuce and tomato. However, the bun tasted so fresh that I had no issue eating just that and gave me the opportunity to tast the freshness of all the ingredients. It could have used a little more seasoning but otherwise, a well made burger and given the circumstances of their mishap earlier with the chef. I need not complain about it. Lastly, our server was not only prompt. She was exceptional in making sure that our 2 year old was able to chew through the slider which had a full piece of bison steak. She gave him some ketchup for his wedges and continued to make sure our drinks were full, the food was good and up to standard and even wanted us to be completely honest so she could give feedback to the new improvised 16 year old chef.
All in all, I hope they can figure their chef issue out. Maybe the kid from tonight will gain confidence in his abilities and continue to climb in the culinary world. If so, I look forward to it in later years. We will be back to try more. Next time I'll opt for the amazing looking side salad with my meal. We were upset that we had to leave before dessert due to our spicy and angry pterodactyl. We really wanted to try the table top s'mores experience. So we'll do that next time as well. The mushrooms were sautĆ©ed in butter and garlic via a hot cast iron pan. All were cooked well and if you like mushrooms you wonāt complain. The jalapeƱo popper burger was good with a mildly warm roasted jalapeƱo on top of the burger with cream cheese and bacon. Burger patty was juicy, the tomatoes had a slight bit of salt and pepper and it was a good combination of flavors. The sliders were simple sandwiches with a bit of cocktail sauce and a large shrimp on top. Both the sliders and burger came with exceptional fries which were a whole potato cut into slices about half to three quarters inch thick. They were cooked well throughout and fried crispy on the outer surface. They came with a dipping sauce similar to a mild French onion with some additional seasonings. The bistro bison was a tenderloin cut that had a good non beef flavor most would call a wild game flavor. Itās bison so itās lean and is not as tender as marbled beef. The meat was cooked well to a pink center. I had a salad with blue cheese and enjoyed eating a crumble with a piece of bison. The side salad was excellent - mixed greens with soasted garlic, sun dried tomatoes, roasted shallot, olives, and croutons.    Read moreWe made an early reservation since we were driving from Rock Springs. We were warmly greeted, and seated at a table of our choice. We started with the Shrimp Skillet, so delicious in a garlic and butter reduction with feta cheese. I ordered the salmon with the house salad. The salmon was cooked with white wine and capers, so delicate and flavorful. The salad was fresh, with just the right amount of vegetables; artichoke, bell peppers, and olives. My husband had the New York strip with a baked potatoe. Cooked perfectly, medium rare, and a nice sized potato. We actually ordered a dessert to share, which is not usual for us to do. Their Jalapeño Brownie with ice cream, which we both enjoyed very much, with the spicy sweetness is a favorite treat for us now. The service was attentive, friendly, and nice conversations with each employee who checked on us. The a atmosphere is perfect for casual to date night attire, warm lighting, and a clean stylish-country decor.
