Now this is a butcher!! Now there is a butcher in Summit, NJ and Union, NJ that both offer excellent cuts of meat and a nice selection of cuts, but this place is next level. I just happened to be waiting across the street for a bus watching the steady throngs of people going in and out of this place so I decided to give it a try. I walked in and it was meat, wall to wall. The cases were sporless and the meat was set out in a very appealing way. Polish specialty candy, condiments, pickles, breads, and juices were on shelves opposite the cases. The people who worked there were so kind and helpful. It's because a young man took the time to educate me on the cuts and choices of bacon, that I left with an amazing haul of meat, all of which I was super satisfied with. It pays to be kind to all who walk through your door. You just never know what a customer is going to buy or what he is going to write about you. I wanted ribs and I was unsure about how to bake them. The very knowledgeable server told me that a 1/2 rack would be more than enough for one person and if I cooked them at 350 degrees for 1 1/2 hour, they would fall off the bone ( We will get to that later ). I left with chorizo pork sausage, bone in pork chop, baby back ribs, Italian pork sausage, Szyka Donova, smoked bacon and German potato salad. The bill was under $35.00. With my sausage, I made a pasta dish with fettuccine, black olives, fresh baby spinach, sun dried tomatoes, and sweet Italian sausage and chorizo, Amazing on every level. For the ribs, I marinated them overnight in red wine vinegar, brine juice from olives, and garlic. I pulled them out of Ziploc and covered them in a nice brown sugar and spice rub, baking them at 350. These ribs were a thousand times better than any ribs I have ever eaten and I have had Corky's in Memphis, Smoque in Chicago, Fox Bros in Atlanta, Mikes in Philly, and Mighty Quinns and Mable's in New York. I was basting them in a honey BBQ sauce mixed with a sweet chili dipping sauce during cooking. I cooked them for 90 minutes at 350 degrees just like the butcher said. They were just sucked off the bone with the greatest of ease. Look at the bones in my pictures! Nothing left on them. I paired them up with some leftover cole slaw and the German potato salad, which was so thick and filling. Both the bacons were crazy good. I sat right at the bus stop and devoured half the smoked bacon. They were already cooked so I have no idea why I did not just sit right there and eat all of the bacon. I imagine when warmed up and plated with scrambled eggs and toast, and you will have yourself a breakfast fit for a king. The pork chop were rubbed in harissa seasoning and then broiled. They did not come to play!. Cooked to a cool 170 degrees, they cut like butter and you barely had to chew the meat! This is my new go to butcher. I want to try everything in here before the year is out. I am already planning my weekend trip there and I look forward to the smiling and helpful faces and the discovery of buying...

We are just passing through on our way from Newark airport (from London UK) road-tripping to California with our elderly, medically fragile dog who can only eat rabbit meat. Can’t bring it through customs so what were we going to do when we arrived from London and couldn’t feed her? I called this shop and not only is getting the product for us no problem, I later asked if I could arrange a delivery service to get it to the hotel, since we arrive too late to pick it up. The hotel can refrigerate it for us that day until we get on, and our sick dog won’t have to wait 24 hours for food. They offered to deliver it, no problem, and even asked if one rabbit should be fresh not frozen so we can cook it right away. Just the pure thoughtfulness and kindness of these guys to total strangers who are passing through. This is a super complex move back home during pandemic times - they’ve been so kind in helping us keep our sweet pup ok - the main priority! We can’t thank them enough, but can write reviews encouraging everyone to support the kind of business that would go way out of their way to just be kind and helpful....
Read moreStumbled on this place by googling prime butcher near me… walked in and a gentleman by the name of Arias, he was so helpful, I chose the Black Angus Porterhouse, 3 1/4 pounds and marbled. Just finished it, the meat was delicious and tender as I cooked in the cast iron with rendered bacon fat, salt and pepper. Great steak, can’t wait to go back and see my Consigliere of Beef....
