My favorite place to buy fresh oysters! Not the best customer service - but all you need to say is that you want a box of medium (or large) sized oysters. The prices are amazing and the oysters are so good. Everyone who BBQ's oysters buys them by the box from this place. Below I outline exactly what to do...
Purchase Oysters from Lucky Seafood: Go to the register and tell them you want a box of medium oysters (4 dozen or 48 oysters) Remember they only take CASH! Give receipt to fish mongers and get your oysters
Get Ice: On way home or next door purchase a bag of Ice and cooler or cooler bag to keep oysters fresh after you clean them
Clean: Take the oysters home and clean them (It's recommended that you wear gloves, so you don't cut yourself). Wash them in cold water and scrub off the dirt, etc. If any are open throw them away. In my box of 48, 3 were open...
Storage: Put the cleaned oysters on ice in your cooler until you cook them
Cook: Start up your BBQ and get it nice and hot. Put oysters facing up on the BBQ (more flat part facing up). This way, when they open, the juice will not drain down into the grill. Again if any oysters are already open before you put them on the BBQ throw them away. Cook until they pop open a little (about 8-12 minutes for medium sized oysters and depending on temperature of grill). Often they will pop open and make a noise or shoot a little juice out - watch out! You will also see steam coming out and the juices bubbling. After they pop open a little, depending on the size of the oyster and thickness of the shell they might not pop open all the way. Then you may have to carefully, should not be hard to do... pry them open with a regular, not sharp silverware knife, all the way to eat them. If the oyster does not easily pry open, leave it on the grill longer. If you want them still raw, when they pop open, take them off and set aside for a minute, then eat. If you want them more cooked, then wait until the steam burns off and/or the shell opens even more.
Eat: Peel the top shell off the oyster, with a regular table silverware knife, then eat as is or add some lime/lemon juice and Tapatio Hot Sauce or BBQ sauce. Enjoy, have fun and share with your friends!... make sure to invite me too!
How many oysters to buy: One box of 48 medium oysters goes a long way... they are rich, full of flavor, and really big... can easily feed a party of 5. If you are also barbecuing other things like chicken, steak, corn, etc., one box of 48 can be enough for a huge group of people... people can only eat so many... and not everyone likes oysters (more for us!)... regardless they will be the hit of the BBQ.
