Questionable staff - Led by a culinary Program Director who enjoyed hearing and "gossiping" with (complaining) students. He seemed to care more about particular students sentiments (aka sitting with them just to hear their gossip and complaints on the program and who's teaching it, rather than about "teaching" them "how and why" of the subject matter -how it should be taught -both WITH short lectures and then THE practical part of doing labs. WHO KNEW the culinary programs approach at PCCC IS all about having students just "play house", atmosphere of which I believe is created FOR the caliber of (urban) students in a community college program, in/from an urban area. How to keep them coming back to enroll and keep them happy in the cooking sense? Now- the following is NOT REALITY --- Hey! Just watch me do this recipe and THEN, so can you!! Nope, SORRY Louis Hernandez & Co. - BUT CULINARY ARTS IS A SCIENCE and an art. IT IS NOT about following a recipe and JUST copy what I do?? ---Hello? There ARE the "why and how's" of CULINARY ARTS and its SCIENCES!! That is why it's called both an art AND a science! This is a school of which doesn't care to have on staff any actual culinary educators- on their culinary staff.
This is a school caliber of which, let's and leans to allowing students more control, with empty complaints. They let students control the route and directions of courses and the material taught. Students can have tests and exams (and grades) removed or changed, AND/OR have the material on them be designed to be "dumbed down" as well. The PD is part of and allows it, that would all contribute directly to the demise of a course's end goal and affect the career path of the educator. No remorse from anyone there. My license expired during the pandemic & couldn't renew it online. A profound ordeal to get an appointment. I had to study a driver's manual all over again. Studied the manual well because there are some questions that if you didn't study well you might not get correct. I passed the test with I think a 95%.
