Very cool and trendy 'hole in the wall' parilla in palermo. The food is exceptional and the staff was very prompt and attentive. The restaurant footprint is relatively small but has a very modern layout with a chef's tasting tasting table centered around the parilla.
I had a reasonably good bottle of wine. No complaints. If you look at my other reviews, you'll know I'm a bit of a wine enthusiast. My suggestion, for the owner, the restaurant food quality and prices are commensurate with more inventory of higher quality wines. e.g. more options $100 - $300 USD
I tried the chori appetizer and ribeye main. Chori was served with arugula and a brioche bun, excellent flavors.
The ribeye ordered medium ( a punto), prepared perfectly pink throughout, light red center, very rare to find in Argentina (pun intended 🙂). I really appreciate that they're able to keep the correct internal temperature while also delivering a strong and flavorful crust, again something commonly lacking in argentinian steaks.
I want to leave an extra compliment for the gentleman at the passe (extra tattoos), masterful execution coordinating all the orders coming in, food going out and presentation finishes, salts, garnishes and cuts.
I was hesitant to leave a review for such a wonderful spot, seemingly under the radar. It's amazing how much better their quality is compared to nearby spots like Don Julio.

Read moreWe had an absolutely incredible experience at José el Carnicero in Buenos Aires. I ordered the 25-day aged ribeye (a portion meant for two), and it was perfection — flavorful, tender, and cooked exactly right. My girlfriend, who doesn’t eat beef, had the chorizo, squid, and waffle fries, and each dish was outstanding. The kitchen went above and beyond: they brought me a complimentary beef empanada, and since she doesn’t eat beef, they created a special cheese and melon dish just for her — also complimentary.
The wine pairing was spot on. They served a bottle called Bife from northern Argentina, made exclusively for the restaurant, and it paired beautifully with the ribeye. Even the small details stood out, like their house José el Carnicero ketchup, which was the perfect match for the waffle fries.
Service was flawless. Our waiter, Nelson, was attentive, warm, and made the entire evening that much more enjoyable. By the end, we were 100% satisfied, and I even had leftovers to take home.
This was one of the best dining experiences we’ve had in Buenos Aires — unforgettable food, thoughtful hospitality, and a true showcase of Argentine beef and wine....
Read moreAbsurdly overpriced! The owners of La Carnicería, located just across from this new restaurant, already operate several very pricey establishments along Thames street. They are all clearly aimed at tourists, with premium prices that don't always match the experience. This new one, in particular, José el Carnicero, is so exorbitantly expensive that it borders on ludicrous. It is difficult to justify paying such inflated prices, especially when there are plenty of other options in the area and in a country that prides itself on the quantity and quality of its meat. It gets too hot sitting at the counter and you leave smelling of meat and smoke; a milanesa (ubiquitous breaded piece of meat) with nothing to accompany it costs 55 USD (ridiculous price!). All in all, beyond expensive. Once you add some fries, and a simple salad the price is over inflated. Left a really bad taste to be so utterly ripped off. Go elsewhere, there is such a lot of choice in that area....
