Went to 20 seats last night. My wife and I had been trying for ages to get seats, but always missed out. Finally we got a chance to go and we were both super excited.
We opted for 1 normal tasting and 1 vegetarian tasting. We also added 1 alcohol pairing and 1 no alcohol pairing so we could get a taste of pretty much everything that was offered.
Staff were super friendly and greeted us well, the Maître D was great. The room was nicely lit and clean and tidy.
The food was amazing, however very small. Now before I continue, we do realise that it is a 'Tasting menu' however, most dishes were consumed in 2 or 3 fork/spoonfuls. We have dined at Wildflower, Harrys at Contis, The Loosebox when it was around, so fine dining is not a new experience, we were both just a little surprised at exactly how small some of the dishes were. They were exceptionally presented and all the elements worked well together.
The biggest disappointment however, was the non alcoholic pairing. The menu showed numerous wonderful sounding mocktails, however besides the first pairing with the finger food, all the other non alcoholic pairings were essentially different types of flavoured teas. We paid $75 for 4 teas and 1 mocktail. Again I get it is all about the experience and the theatre - Thank you to Remy for that, but it did feel like a bit of a rip off. The alcoholic pairing was $120 and offered 1 drink per 2 courses. Which again was on the very high side, but the wines were pleasant.
I felt the dining was a little too long too - we both had numb bums by the time we left which was after 10pm - we arrived just after 6pm... 4 hours I felt was a tad too long. I am sure some people will love that though.
Overall the experience was great and we are so pleased we went. However I think the vegetarian meal should be reduced in price slightly as essentially it was the same as the main, but instead of a meat protein, there was some beetroot or a mushroom, which as we all know isn't priced at the same price as Lobster, Salmon, Kingfish, Lamb Loin etc. and the non alcoholic pairing either needs to up it's game or reduce the price as essentially it is only teas on offer.
I would give it 3.5 stars, but I can't do that on google.

The minimalist interior threw us off when we entered, The venue itself was a little on the cold side as it was a cold night outside, but I wouldn't say I was uncomfortable. As more guests arrived the room warmed up and eventually it was a perfect temperature. We had booked for 7:30 and were ready to eat, However after arriving we still had to wait 25 minutes for our first courses. Just some bread and butter would have been nice as I'm assuming a lot of guests will purposefully not eat much on the day of their visit and we had almost finished a bottle of wine before our first course arrived.
Speaking of wine, Whoever the french somm/manager guy is, he's amazing. Fantastic hospitality from start to finish. Guided us through this pretty wild wine list (Alot of producers we had never even heard of, and we're all hospo/wine nerds). We ended up grabbing a delicious Petit Chablis and then moving onto the delicious Clos Marie Manon 2022.
Service was excellent, Plates were always promptly cleared, and even very high level hospitality details didn't go unnoticed (Serving the ladies first, Always approaching guests from the right, brushing the table with that adorable tiny brush and pan ETC). This is often the missing link for alot of Perth fine dining, however the team at Twenty seats absolutely knocked it out of the park.
Finally, the food. Every dish was wonderful and really showcased the Chefs skills. My only complaint would be that after the palette cleanser of Gazpacho Sorbet and Whipped Fetta (Amazing btw) every dish was extremely rich. And whilst I appreciate the quality of the meat presented, it was difficult to enjoy as it was so heavy one after another. . I would have loved some salad, pickled veg or some acidic thing. After the meat dish we were givena beautiful bread and raclette, which, at this stage in the meal, was much too rich and filling. Its a shame because that course would have made a fantastic first or second course. However this is getting very nitpicky and was honestly such a small issue that we didn't bother to voice it. I'm sure many others would love a double rich meat main, however it was just a bit too much for me.
Overall, Twenty Seats was a fantastic experience with negatives so minor, I wouldn't rate it anything...

Twenty Seats is extraordinary and I cannot recommend it enough. Every single dish is meticulously crafted from the exceptional quality produce, the pairing of exquisite flavours to the way it is delightfully presented. It is truly a magical experience for your senses. Todd is not only an exceptional chef; he is an artist for every dish is a masterpiece for your eyes and your tastebuds. When you have food this good, what could possibly elevate your experience to another level? The service. From the moment you step foot into the restaurant, you are greeted warmly by Remy and the team who make sure you are well looked after for the evening. They know their food exceptionally well and they have profound knowledge of the wine selection and pairing. Then there’s the cocktails! There are cocktails and then there are Remy’s out-of-this-world cocktails. I highly recommend starting with the Sweet Paris then leave it to Remy to pair your cocktails with the courses. Then the adventure begins! One final mention, Twenty Seats only do one seating a night which means you will not be rushed through your meals and feel pressed to leave.
