Wow.
We were lucky to be able to attend on opening night.
I go to a lot of restaurants, Brae at least a couple times a year, and I travel a lot to experience food and wine.
It's really lovely to be able to find that a block away, rather than 24 hours on planes away.
Because it's hard to get right.
Even the best have suffered in the last 5 years.
I feel like in our current climate here in Australia economically its hard to run a restaurant.
Finding and retaining good staff.
Stocking the best wines and cheeses.
Using the best seasonal ingredients.
All of these are key to be able to deliver French Cuisine at a high level.
But these guys, they really pulled it off.
I was lucky enough to be designated driver for my partner, so I had to confine myself to by the glass wine.
Usually this is the crap option, but the Merlot was French and well balanced and went very well with my Beef Tartare which was flavour packed.
I was in a meaty mood so I had the Beef Rossignol and the house made Pate topping it was smooth and silky and delicious, paired perfectly with the delicate sauce redolent of smoky onion, and the melt in the mouth Filet beneath.
When you pair this with the incredible attention to detail, thoughtful accomodation of gluten free variations on classic themes, and the amazing service, this is a MUST DO when you're in Geelong.
Next time I'm NOT driving, I'll walk - and will explore the wine list more adventurously and report back to you here.
