I thought I'd reviewed Baker Bleu before, I've been a couple of times, and I've always enjoyed my visit. I'm fortunate, whenever I visit, I walk straight in. There's never a queue. Admittedly, I've not been for over twelve months, as I moved Northside. Things are just as good as I remember, though.

I arrived early, the sun was shining, and the shelves were brimming. I wanted to beat all the 4x4s on their dangerous drive around the rough terrain of Melbourne. I'm glad I did. There was plenty left. Last time, I missed out on some of the pastries.

The staff were nice, they talked me through the pastries. Like all good bakers, they have a core selection and seasonal rotations. I'm a humble croissant kind of guy. They are top of the charts here. In the top five in Melbourne for me.

The croissant is a bit different. It's well laminated as you would expect, but the dough is a sourdough, I believe. It's nuttier, chewier, heavier, and they have great bite. It's a unique croissant, and that's why I love it. The breads are also very highly rated. People come from all over Melbourne for them. I also had the cinnamon pastry, which was fantastic. It stayed fresh all day, so I had it in the afternoon with a beautiful pourover coffee.

The shop is small and ideal for takeaway, but there's a few seats outside, and the streets are nice around there.

This bakery consistently produces high-quality breads and bagels with excellent texture, flavor, and freshness. From a culinary standpoint, their products are exceptional and clearly crafted with care and premium ingredients.

However, I have observed a consistent gastrointestinal response specifically after consuming their bagels. While I typically have a regular bowel movement pattern limited to daytime hours, ingestion of their bagels appears to induce nocturnal bowel activity. In several instances, this has resulted in two bowel movements: one during the day and an additional urge and passage during the night, which is outside of my usual digestive rhythm.

I hypothesize this could be due to the high fiber content, fermentation activity (if sourdough-based), or specific ingredients in the bagels that may increase gastrointestinal motility or cause osmotic activity in the colon. Another possibility is that the bread may expand or ferment further in the stomach or small intestine, stimulating peristalsis more rapidly or intensely than other foods.

While not necessarily problematic from a medical perspective, this response is consistent and notable enough to mention for others who may have sensitive digestive systems or established GI routines.

I absolutely love Baker Bleu, our local neighbourhood bakery in Caulfield North. It's a real gem, and we consider ourselves lucky to have Melbourne's best bakery right on our doorstep. We've been loyal customers for a while now, and here are some of our all-time favourites: Boule - Their white sourdough loaf is a true masterpiece. Baguette & Ficelle - Perfectly crusty and delightful Country Roll - A small white sourdough roll with a chewy crust and a soft, heavenly crumb. Chocolantine - A sweet treat that never disappoints. Croissants - But not just any croissants – their sourdough croissant is a unique, nuttier, chewier, and heavier delight. The new Choco hazelnut pastry and strawberry pastry are just divine.

The staff at Baker Bleu are incredibly friendly and always happy to guide you through their mouthwatering pastries. They offer a core selection and delightful seasonal rotations that keep things exciting. The croissant is a standout, thanks to its unique sourdough twist, which gives it a fantastic bite. The bread is also top-notch, and it's no wonder people from all over Melbourne make the journey here. 🍞🍞🍞For sure lives up to the hype!🍞🍞🍞 I went here 8am on a Sunday with a relatively short line greeting me. I only had to wait 5-10mins to get in and order! A quick description of what we had: - Croissants πŸ₯ ($5): The best I've had! Perfectly crispy outside, with a supple and not-overly-buttery inside. I believe its sourdough based, so you also get a slight twang of that fermentation. It's an absolute work of art 🎨 - Baklava Escargot roll 🐌 ($8.5) : No actual snails in here, but it's a nice sweet roll with that signature baker bleu pastry. Essentially a French Baklava. - Pain au chocolat 🍫($5.5) : My personal favourite. Same killer croissant pastry with decadent sharp dark chocolate accented throughout! A perfect combo paired with a latte - Country loaf 🍞 ($8.5): Sliced up, drizzle abit of olive oil and salt...just divine! Outside is super crusty and the inside has that nice elasticity you are looking for. Also, shoutout to the design team for all the takeaway packaging. It's just sooo aesthetic!πŸ‘Œ Makes it very easy to gift/surprise people. It's that attention to detail which just takes it to the next level.
