Banksia is quickly becoming my favorite restaurant. I dropped in a couple of times during the day and was really impressed with food. Everything was just that little bit better. The Ruben sandwich was sensational. Not only was the meat tender and delicious but the sauerkraut mild and delicious. The bread was that little bit better and everything in it created a taste sensation. The lamb chops were among the best I had ever tasted. Not just delicious but juicy and that little bit over the top and you can order as many as you want. The house cured salmon is wonderful too. So tonight I was really hungry and wanted a good meal after a long and tiring day so I dropped in for a steak and boy was I a happy camper. Tender delicious easy to eat not overdone and a great mild horseradish and mustard to go with it. A simply dressed cos lettuce with thin perfect slices of radish and cucumber were the perfect accompaniment to the steak. The mushroom butter and toast was probably best left for another day, but so delicious I couldn’t resist. So the truth is I am now working my way through the menu. The service is exceptional. They always have drinks that are just that little bit different. The place is on the corner of Hawthorn Road and Balaclava Road and all windows so light and bright, clean and stylish. From the moment we sat down, every dish was a masterpiece visually stunning and incredibly thoughtful in flavour and texture. The lamb cutlets were cooked to perfection, tender and full of depth. The entrée (Tuna) with radish and fresh herbs was a refreshing start, and the beautifully plated vegetable dish with charred peach, creamy dollops, and crispy garnish was next-level artistry.
And can we talk about the drinks? The cocktail had that perfect balance of citrus and boldness so smooth and refreshing it made the entire night feel even more special.
But what truly elevated the entire experience was the heart and soul behind it Chef Nishant. Not only is his food spectacular, but his presence and dedication shine through every detail. He’s the kind of chef you can feel behind the plate. Passionate, precise, and so humble. Honestly, one of the best dining experiences I’ve had in Melbourne.

No seriously; with the exception of maybe Attica, you normally have to travel to the CBD or Smith Street to find food like this. The difference is that Banksia is nice and casual so you don’t need an excuse to go there beyond “it’s the weekend, so why not?”
Everything is excellent, but here are my highlights:
Tuna Tartare with Stracciatella. Cheese and raw fish? Surely not! Seems like it shouldn’t work but it totally does.
Lamb Cutlet. Will redefine what a lamb cutlet means to you. There’s something in that dip, I don’t know what it is, but wow.
John Dory. I literally swore under my breath when I first bit into this. Fish cooked to perfection with a fragrant, unusual and delicious sauce.
Davidson Plum Sorbet. If you’re expecting a scoop of sorbet think again. This dish is full of interesting textures and flavors, and the iced cinnamon adds this sharp spice that is totally unexpected and delightful.
