4.5/5 ⭐️ Chef Yong puts creativity and innovation at the forefront of his service and it’s what sets him apart from other Japanese restaurants in Melbourne. You’re greeted with a sleek, minimalistic venue once you step inside, seated only 8 guests for 1 dinner session, where the focus is entirely on Chef Yong. You’ll be treated to 22 courses for $220pp. Whilst I don’t recall the name of every dish we had I can confidently say that there was nothing that we didn’t enjoy. As you’d expect at this price point, everything is incredibly fresh and carefully prepared. We had the pleasure of being seated in the centre, so we were marvelling at Chef Yong’s work for the entire 1.5hr. While my previous omakase experience was unforgettable for its own reasons, this experience was refreshingly different. Chef Yong had genuine engagement with his guests and took the time to talk to us about the intricacies and decisions that go into such an experience. I also thoroughly enjoyed that almost every piece of fish had a nice creative flare to it, whether it be pickled seaweed on top, drizzles of lime, shiitake soy glaze or scallop salt. Having been to an omakase which was much cheaper ($140pp), I felt that the quality of fish between these two experiences was quite similar. For that reason, I’d be more inclined to go to the more affordable option, despite it having a much simpler menu. I’d still absolutely recommend Sushi On to anyone looking for a fantastic omakase experience, but for those who don’t want to break the bank, I do think we have a similar option available for a lesser price. Nevertheless I thoroughly enjoyed my experience here and have been smiling about it ever since.

Unlike Kisumé’s omakase, which felt more like a performance with smoke and dry ice, Sushi On delivers a refined, understated, and traditional approach. Watching Chef Yong slice and prepare the fish right in front of us - rather than serving pre-prepped sushi - made the experience even more special. We booked this omakase to celebrate my brother’s milestone 18th birthday, securing our seats when reservations opened (new bookings drop at 7pm on the last Tuesday of each month). Sushi On’s Omakase Pricing: - Dinner: $220 per person (22 courses, including 14 pieces of sushi) - Lunch: $149 per person (16 courses, including 12 pieces of sushi) The meal was well-paced and beautifully executed, with fresh, high-quality ingredients that let the sushi shine. While I wish I could remember every type of fish we tried, what stood out was the balance of tradition and artistry - elegant presentation without unnecessary theatrics. For those who prefer sushi-focused omakase, Sushi On is a must-visit. A true hidden gem in Melbourne’s east, and well worth the price for a two-hatted experience.

For any sushi enthusiast in search of an exceptional dining experience, this restaurant is an absolute must-visit.

Whilst I don’t recall the name of every dish we had I can confidently say that there was nothing that we didn’t enjoy. As you’d expect at this price point, everything is incredibly fresh and carefully prepared. While my previous omakase experience was unforgettable for its own reasons, this experience was refreshingly different. My wife and I met Chef Yong at Kisume almost 6 years ago and he quickly became our go to for an amazing Omakase sushi experience. We were elated to learn that he has ventured off on his own to establish Sushi On, and we endured an agonising wait to be able to get out of the house after a newborn and book in our spot at his restaurant. We were not disappointed and the wait was definitely worth it. A disciplined and meticulous presentation of sushi in its pure form. The dedication, concentration, attention to detail and skill of Chef Yong is able to shine as there are no distractions that come from working in a larger restaurant. Each diner has his full attention to ensure the each piece is just right. The ingredients are carefully selected, prepared and then explained before being served with a large focus on fantastic local produce. The experience was on par with the Michelin Star omakase sushi visits that my wife and I have been lucky to experience in Tokyo, and we thank Chef Yong for his amazing efforts to establish something on this level in Melbourne.
