They are tucked away behind The Corso in Manly, serving coffee & experimenting with the humble croissant to create new and exciting flavour profiles.
I assume its called Rollers, because they roll the pastry into layers to create beautiful pastries.

šš¼āāļø The brilliant minds behind Rollers deserve all the business they get and more. They have really built an institution in Manly that people come near and far for.
āļø I got an iced coffee which was delicious!! I actually feel sorry for their regulars because itās always so busy here and youād be tempted to get a pastry everyday.
They offer coffee and non coffee options like tea, chai, hot chocolate and housemate sodas.
š“ Honey Ham nā Cheese Croissant - this was yum!! The ham was a little overwhelming because I think it had a few slices it was packed full of ham, it took away from the honey taste. Cheese goodness tied it all together.
The āEverything Bagelā Croissant, coated in a unique everything bagel mix, filled with a cream cheese schmear of dill, chives, lemon, fennel seeds and onion. This pasted like a pizza pocket somehow!
Almond croissant filled with a frangipane - iām not an almond croissant orderer, but this took me by surprise and id get it again.
Pain au Chocolat - so many layers!! Also not a choc croissant girly but I was this day!
I love their experimental menus and still would love to try their cruffins.

Ā Ā Ā Read moreOn a rainy public holiday of dubious merit I crossed the city to check out Rollers Bakehouse in Manly. Self-taught baker, James Sideris, has set up in an attractive laneway space where concrete minimalism meets the cactuses and soft pinks of Palm Springs. The name, shaped in metal bar cursive, looks more like an art piece on the smooth concrete wall. A queue snakes away from the loaded glass counter, backed by steel racks bearing pastries in reserve. Behind them, an open kitchen that allows you to see the bakers in action from the counter and open-fronted dining courtyard, which is also full.
The range is overwhelming so we sample widely, picking up a fat dense scone with cream and runny raspberry jam ($6.50) for the only monarchist among us. Itās eclipsed by the laminated savoury pastries: a dense and gravelly blend pumpkin and pine nuts ($11), layers of marinated eggplant, jalapeƱo cream and zaatar with fresh hummus filled after baking ($10.50), andāmy favouriteājamon, pear and galotyri cheese ($11). Attractive garnishes, from pickled green chillies speared through creamy cubes of goatās cheese, to rolled jamon held on with a split green olive.
The garlic knot ($9.50) feels like fine dining material, with croissant dough daintily tied up with confit garlic, thyme, rosemary and GruyĆØre cheese, then dusted with fresh parsley and plenty of sea salt. Beautiful separation in the flaky pastry layers is evident in everything we try, down to the concertina-like cinnamon scroll ($9) rolled hot in cinnamon and cardamom sugar. You really canāt go wrong here, even paying a holiday surcharge to honour a day for a monarch...

Can we talk about how tricky the place is to find, I felt like inspector gadget searching for this place in Manly. Itās hidden away in a back alley! šµš¾
š æļø for anyone wanting to drive in I would recomend parking at Pacific Waves Parking, itās 2 hours free and it starts at $11.50 once you go over. It wasnāt busy when we arrived. I heard if you come during the week itās busy!. There is public transport available eg š
The location is in the alley between butter boy cookies which isnāt hard to miss since itās on the main area of Manly.
The menu is easy to read with recommendations and images being shown.
7/10 for customer service! 10/10 for the pastries, there is seating inside and a few outside.
They both have the dine in and takeaway option I would recommend to come early especially if you are wanting to have a seat, it's first come first serve basis. It gets very busy and youāll have to wait for you to grab a seat.
Price ranges from $5-$40
I love the ambience of the place, and the vibe. The customer service however was average, waited awhile for our drinks and pastries.
