Thereās no need to cross the Bridge for Rollers Bakehouseās loaded croissants anymore. Tenacious Bakehouse have levelled up the genre with even more artful toppings and tastier fillings, right in the heart of Darlinghurst. The narrow shopfront is mostly taken up with a glass counter displaying orderly rows of the dayās pastry selection. Behind it sit a small number of tables for those whoād like to grab a coffee and eat in.
To my palate this spot excels in savoury products over sweet ones, with the possible exception of the grape tart ($12). Itās one of the most beautiful pastries I have seen, with cheesy custard filling bejewelled with bisected green grapes over perfectly laminated golden pastry. Think of it as a cheeseboard alternative for your next dinner party. It eclipsed the plum tart ($12) with pineapple, plum jam and coconut, and the twice-baked Portuguese tart ($12) made here with a miso glaze, quite savoury egg custard and stiff, burnt (and therefore too bitter) pastry.
The star of the savoury range was the beautifully decorated corn cheese ($10) with grilled juicy corn, crisp corn flakes, almond cream and corn cheese mayonnaise. The takoyaki croissant ($12) takes on the Japanese octopus ball with an interior of tender octopus salad and a flaky fried bonito topping glued on with takoyaki sauce and mayonnaise. Despite their petite size, savoury itemsāincluding the peperochini ($10)āare dense and filling. Studded with pepperoni, this croissant is bedecked with bolognaise sauce, a drizzle of ānduja oil and roasted rosemary. Yeongjin Park (ex-Lode) packs technique and flavour into every item, including some inspired by his Korean heritage, like pork mandu ($10). A pastry with cornflakes and onion Mayo, red bean pandora, black garlic crown, thereās certainly unique and interesting flavour combinations.
This place is expensive, but you do need to pay for quality, particularly because I imagine the time taken to make these would be significant.
This Portuguese Tart, at $12 is highly recommended. It is a textural experience with its crispy multi-layered pastry, full of a runny eggy custard and it is not too sweet despite the drizzle of miso caramel. Bigger and crispier than your regular Portuguese tart but a good pastry thatās for sure.
The Pork āManduā ($10) was a pastry that we thought was a sausage roll. It kinda was, in appearance only, for its filling tasted exactly like a Dumpling; pork, chives, cabbage. So interesting, but very tasty.
We also enjoyed the āJiniusā a flaky buttery pastry with caramelised white chocolate and almond marzipan. Similar in flavour to an almond croissant, sweet and crispy, it was delicious.

I ordered Injeolmi, which is like a croissant filled with fresh cream and sweet red bean paste, then rolled in the bean powder - which tasted nutty. It was the best croissant I ever tried, which includes cronut, crookie, and other croissants with different flavoured cream in them. This is it! I wonāt try anything else now. The picture looks a bit messy and yes it is messy as the powder flies everywhere. I was so happy that I took it to home not having at the spot as I looked ridiculous after finished it. But all forgiven because I felt truly heaven while it was in my mouth. But itās not a dine in type of bakery that you would go for brunch although they have spacious sitting area. The area doesnāt offer good scenery or relaxed atmosphere, and you wonāt feel like eating in when the staff stares at you without smileā¦. You kind of feel like you will need to get out right after purchase. Well, regardless, I would go and try different things as well. Itās a bit pricey...
