It was a favorite place for years, but it seems success has blinded the people from HleBar. Yes, it is in an expensive neighborhood and it’s a trendy bakery, with wealthy customers, but the quality is going down, while the prices are getting outrageous. Just bought an Easter bread (kozunak), ordered it the day before as it was high on demand. Didn’t look at the price tag. Expected it to be expensive, but I got stumbled - it was BGN 19 for half a kilo! Well, what the heck, I thought, it must be something special and it’s a special occasion - so why not. It was disaster - forget the price, the whole thing, the texture and mainly the taste has little to do with kozunak. (And yes, I am aware there are varieties and taste could be subjective.) So, if I may: to those reading this - don’t buy kozunak from this bakery. The rest of the things are OK, but don’t buy kozunak here. to people from HleBar - go to a village in the country, find a grandma and ask her to teach you how to make kozunak. They use olive oils instead of vegetable oils and sell a small range of clean high quality products including fermented cod oil and marine collagen supplements, a selection of meat and dairy products, etc. I have a sensitive digestion which reacts to rancid oils and I have never had problems there. I hope they maintain this quality because my experience in Bulgaria that most places are not consistent in the quality of food they offer. It had been there for who knows how long and was obviously not fresh. It was microwaved and didn't taste well either and my stomach was a little upset from the 'delicacy'.
