First time trying Noodleman today, I've been waiting to go there since I saw their sign pop up. I'm not disappointed. The restaurant is cleanly decorated with polite and helpful staff. You can also watch the staff hand make the noodles in front of you which is also cool. For an appetizer I had the wanton in chili oil (a2). The wantons were surprisingly small and for the price (7$) would have been nice to recieve either larger wantons or just more of them. The flavor of the wantons was quite nice on the other hand. Seasoned with what tasted like black pepper gave the wantons a nice kick along with the hot chili oil. Some bean sprouts and herbs added a nice texture difference to the some what chewy wanton shell. If the dish was cheaper or came with more portions I would be able to recommend them, but unless you really love your wantons I'd skip out on this dish. For my main dish I had one of the beef noodle soups on the menu that came with some pickled greens and Bok Choy. The broth is just straight up beefy goodness. Although you may find it a bit one dimensional on its own. I added the remaining chili oil from the wantons to give the dish some spice. The noodles were quite pleasant, a nice chew and even after sitting in the broth for a little bit of time didn't get overly soft. My one complain with the noodles is because the broth is so thin and clean, none of the flavor attaches to the noodles themselves. So unless you don't mind just the flavor of the noodles on their own (which there isn't much of) you will probably want to chase the noodles down with some broth. The veggies were fresh and delicious. The pickled greens added some sour flavor to the broth giving it some extra dimensionality. Now for the star of this dish, the beef. The beef in this noodle soup is jam packed of beefy deliciousness. I didn't think beef could be this beefy and this delicious (I'm serious). Some of the most flavourful beef I've had and while not overly tender, is quite tender enough. The table ordered a traditional appetizer of soft crunch beef rolls which came in at the appropriate time frame to satisfied the yearning of hunger pangs. The flour wrap was soft on the inside, crunchy on the outside. Beef was thin and tender. Very flavorful. As I recall, rolls of this nature usually come with a side of Hoisin Sauce for dipping. Nevertheless, tasty.
Kung Poa chicken noodle (medium spice) due to the unknown hotness which varies from different establishments came next. The flavor and spice were appropriate, given the request of the degree of spiciness. The on-sight noodle making was not a disappointment as the final product was soft, firm and extremely palatable. With varieties of flavor from nuts, chicken and different vegetables, Kung Poa is by far the dish of the favorites.
The Shanix noodle was the final dish that arrived with aroma that would satisfy the yearning of hearty broth and beef briskets, firm but tender to every bite. The only downside of this dish was that it should've been a little hotter as it arrived in a warm state. Soup like this are always steaming with heat that broth would only be allowed to pass the lips with caution. The flat broad noodle could have been cooked or steamed just a little longer as the noodle should be soft throughout with no hardness in the middle.
Pricing for this establishment is fair considering the distant from the metropolis which charges a little less from the vast amount of competition they have to endure.
As this establishment is fairly new, there’s always room for improvement. Servers need to be a little more attentive to their tables, ensuring water are replenished, food items are satisfactory and anything else that would make the dining experience more enjoyable (not that there were any concerns or issues). There are numerous more dishes that deserves a future visit

Read moreQuality handstretched noodles, with quality homemade broth and sauces. The right amount of flavour, and the spice was enjoyable without being painful. We were a table of five, two being children. The kids were pleased with the fried rice, one loved it, and the other enjoyed it but said it wasn’t her favourite (I made her share with her brother- that may have had an effect on her review). The noodle soup was divine. The Mongolian beef and noodles were perfectly seasoned. We were all surprised at how we thought the meat and vegetables were done, and then we would find more. The soy sauce and roasted chili oil that is at every table are delicious add ons. My hubby and our teenage daughter shared the spicy green onion pork dumpling appetizer: they found them flavourful, great texture, and the right spice.
The staff are lovely, mindful of upcoming needs, and able to offer insight on menu items. My kids and I kept going to the viewing window to watch the cooks preparing the pork dumplings and the noodles. When the lady noticed us watching her making the dumplings, she slowed down and showed my son each step through the glass.
We are all excited to go back!
Also, parking was easy. Bathrooms were clean. And it looks like they have a bubble tea bar at the front that I will want to look into...
