I had chicken tenders that weren't hot enough. It's one thing to cook in the fryer than leave it in the warmer to serve to customers. It's another thing if the chicken has been in the warmer for a period of time. If the chicken has been in the warmer for a period of time. It needs to go in the garbage. In the event that you don't want to throw it in the garbage and still serve it to the customer! Than it needs to go back into the fryer for at least a minute to at least get it stifling hot. No one wants to be eating Luke warm chicken tenders. Temperature Danger Zone is between 4 degrees Celsius and 60 degrees Celsius! So if it was Luke warm that means it was 55 to 59 Celsius. Luke warm could lead to customers getting sick. Keep that in mind all the time! Chicken should always be 70 degrees Celsius and higher when serving! Always have a thermostat nearby to check the proper temperature at all times. Go the extra mile and make sure it goes to 74 degrees Celsius as this is the perfect temperature for hot chicken.
