Gibson and Company in Collingwood, Ontario, is a delightful café that beautifully combines a welcoming atmosphere with a commitment to quality. Upon entering, I was immediately struck by the warm ambiance, featuring rustic charm with modern touches, comfortable seating, and soft lighting that encourages patrons to settle in and enjoy their time.
I ordered an Americano and a misto, both of which showcased the café's dedication to excellent coffee. The Americano was robust and rich, with deep, complex flavors that highlighted the skill of the barista, perfectly brewed to eliminate any bitterness. The misto was a delightful blend of steamed milk and coffee, resulting in a creamy yet flavorful beverage that was comforting without being overly heavy, served at just the right temperature.
The service was exemplary; the staff were friendly and knowledgeable, eager to share recommendations and engage in conversation about the coffee selections. Their passion for their craft was evident, enhancing the overall experience. The wait time for my drinks was minimal, and the baristas seemed genuinely invested in providing a top-notch experience for every customer.
One standout aspect of Gibson and Company is its commitment to the local community. They source ingredients from local suppliers whenever possible, ensuring freshness and supporting neighboring businesses. This local focus adds an authentic touch to the experience, creating a strong connection between the café and the community it serves.
Overall, my experience at Gibson and Company was delightful. From the inviting atmosphere to the expertly crafted beverages and attentive service, every element contributed to a memorable visit. Read moreI was in Collingwood on Vacation but needed to work for a day and decided to search for a local cafe in the area. This one had the best reviews and the photos looked like it would be a great atmosphere.
Oh boy, this place was STELLAR. Firstly, the experience of walking down the alleyway with fairy lights on top made me feel like I was walking down Diagon's Alley in Harry Potter. The inside was modern industrial, exposed brick with amazing photgraphy prints. Tons of open space and a great atmosphere. The clientele was a mix of young professionals and seniors enjoying their day. I honestly felt like I was in a King Street West Cafe in Toronto (actually, its better than most cafes in Toronto.) I believe they serve Pilot Coffee, which is AMAZING, and they have a great food and wine selection for lunch. It's more expensive than your local Tim's, but much MUCH better than any Starbucks. The staff were also very kind and made sure you were having a great experience.
I wish I could uproot this place and bring it back home with me. Excellent coffee, excellent service. The only thing I would recommend is maybe adding more extension cords and hubs so all tables could have closer access to power if need be. I ended up having to use an outlet a bit further away from my table.
Can't wait to come back here! And please open an outpost...

In downtown Collingwood, you'd never guess such a place that pays credence to that bygone time period existed, and to the uninformed eye you'd be correct. Discretely nestled down the narrow alleyway that separates Metra Fashion House and Downtown Collingwood Business Improvement Area, you'll find Gibson And Company.
Coffee shop by day, cocktails and spirits by night, with exposed brickwork and deep leather couches, this place is everything outside of formal, yet structured within an atmosphere of sophistication.
As erstwhile as this local tries to be in charming the pants off its patrons, serving up a cup of espresso on par with Starbucks, unfortunately, it's selection of beverages isn't, with over-inflated prices that might hint towards an underlying sense of overcompensation to cover the exuberant cost of rent.
Regardless, the choice is evident.
Go to Starbucks if you're in the market for a reasonably priced handcrafted coffee beverage, but if intimacy beyond the hustle and bustle of corporate franchises is what you're looking for, then Gibson And Company is...
