We visited on the second day after opening, fully expecting some service hiccups as they got into the swing of things, but what we experienced was pretty unacceptable. While the wait to be seated was reasonable—only about 10 minutes, despite being quoted 20-30—the issues started after that. The hostess gave us menus, asked about any allergies, and mentioned our server would be with us shortly. However, "shortly" turned into a 25-minute wait, and no one actually came to our table until we finally flagged someone down. During that time, the only interaction we had was someone coming by to kick us out of our booth and move to a small table for two, which felt rude, especially when another party of two was seated in our original spot almost immediately. If it was to move for a party of four or something we can understand but replacing us with a party of two again was just plain rude. It felt like they were prioritizing certain guests, as the new party was eventually able to order, eat, and pay before our food even arrived.
As others have mentioned, we saw multiple tables that were seated after us get served their food and even pay before we received our meal. We were there for a total of 1.5 hours, with an hour of that spent waiting for our food and watching the staff trying to avoid eye contact with us, the table that had been there for ages but with nothing on it yet. Our table was located directly across from the kitchen, so it's hard to imagine we were simply overlooked. When the food finally arrived, there was no apology or acknowledgment for the delay—it felt as though the staff was avoiding us. Sadly, the only prompt thing about our experience was when it came to getting us the bill, which they asked if we wanted it the moment we were done eating, so they could kick us out to make room for others.
The restaurant itself has a typical trendy vibe with exposed brick, giving it a rustic feel. As for the food, it was fine—not bad, but nothing that set it apart from other ramen spots in the area. We had been watching the signs go up for weeks—JINYA Ramen was coming to Edmonton. As ramen lovers, my spouse and I had been counting down the days. There’s something about the promise of a warm, rich broth on a chilly evening that pulls you in. So when the doors finally opened, we didn’t hesitate.
From the moment we stepped inside, the atmosphere pulled us in. The lighting was soft and golden, the design sleek and modern with just the right touch of cozy. It wasn’t just a restaurant—it felt like a space designed to slow you down, to make you sit, sip, and enjoy.
And that’s exactly what we did.
We started with the Salmon Poke tacos in our first visit, together with the tempura Brussels sprouts. One bite and we paused, exchanging that look—the one that says yep, this was a good idea. The crispy shell, the fresh, melt-in-your-mouth salmon, the hint of spice—it was the perfect bite to open the meal. But the Brussels sprouts was better in my opinion 🤷.
Then came the ramen. We ordered two kinds to explore the menu, and each bowl arrived like a work of art: vibrant, aromatic, inviting. The broth was rich and comforting, the noodles perfectly cooked with a little bounce, and the toppings thoughtfully prepared. While we agreed that the flavor profile could go just a bit deeper—a pinch more boldness, maybe—a lot of care clearly went into each bowl. It was satisfying in a way that lingers.
The service was just as warm as the food. Our server was friendly, attentive, and struck that perfect balance of letting us enjoy our evening while always being close enough if we needed anything.

Noodles are gross and not fresh, note the brown spots on this Kaedama order. First time I ordered them, they were worse spotted and brought to me cold and slimy. Could have even been someone’s used food. No effort to rectify. Congealed with my broth before I got back to the office.
These are not buckwheat or whole wheat noodles. So they are brown likely from being left standing and/or poor mass production. Spots could be from husks, bugs or machine Oil. Was told by a Japanese friend to just walk out if they look like that.
Opening visit, terrible service, but understandable. Yuzo Shio is one of my favourite ramen styles, but they did it dirty. Gyoza were watery. Chashu only highlight. The POS system charged my friend who’s in finance extra money on the bill for GST for a simple dollar amount that anyone could do the gst calc for.
A bit over a week later the Tonkotsu Black was missing the black garlic Oil, so I was able to taste close to what was their base pork broth, watery and bland. And the noodle issue above. Server was nice and tried, but still didn’t correct that mistake on the cold noodles. Appy wasn’t memorable.
Couple weeks after that went with a local ramen club. Tried many appies, where the only thing I’d recommend would be thecrispy chicken. Nice server who read back all our orders, yet they still came out wrong. So Im guessing the issues are with the POS system and kitchen. Kaedama looked better and came out warm, but was still not good according to what I’ve been told with the brown spots. It’s a chain so they must just be making quality concessions considering friends have raved about the Calgary and Vancouver locations. Spicy Tonkotsu(hot) was child’s level heat and bland.
