I will keep this as constructive as possible as this is a brand new restaurant, so there is always a chance to improve.
Arrived around 8pm with my gf, was seated immediately, their was 2 other grouped patrons at the time completing their meals, but restaurant otherwise empty and didn't see a bunch of say uber driver's coming in to pick up orders. Placed our order, my gf asked for tap water, and I ordered a gingerale as my drink. The Gyoza arrived after 12 minutes of ordering, pork skewer at 19 minutes, my Ramen arrived at 24 minutes, and my gf ramen arrived 30 minutes later after ordering. I then had to ask the waitress to get the water and drink we ordered. If we were a large group and they were busy, I would understand our ramens coming at different times, but for a empty restaurant when we are the only active order, I don't feel like their should be a delay, and the restaurant should be able to serve two Ramens at the same time.
On to the food.
The best thing i consumed when at the restaurant was the Canada dry gingerale I ordered as my drink.
The Gyozas would be the second best item. Ordered the Chive and Pork Crispy Gyozas. Now my issue with these are that they are just bland. You really just taste chives, and the like panko crusted dumpling wrapper. It's served with soy sauce, which sure adds some much need salt to them, but a spicy mayo or aioli would be a lot better. But as it stands, the crispy chive pork gyozas get a 5.5/10.
The pork skewer is when I should have known we were in for trouble in the near future. While you can see by the photo at some point in time they were charred, I greatly questioned if it was cooked when we were at the restaurant and or if they are cooked and then stores in fridge and taken out and gently touched to a hot surface before order. To touch the exterior was warm, but once we bit into it, the centre of the pork was cold. Just cold pork fat. I do not recommend the pork skewers. 0/10.
Lastly, the Tonkotsu Ramen. If you look at my profile, Tonkotsu Ramen is the #1 thing I order from Ramen restaurants. This, without a doubt, is the worst Tonkotsu Ramen I've ever had. I tried the broth when it arrived because it was Lukewarm at best. And so dark and cloudy, it's one thing if I had ordered a spicy version or one with black garlic in it, the opacity of this broth was concerning. There was nothing creamy, savoury, or delectable about this broth. It honestly just tasted like the last bit of overly reduced soup at the end of the day that was scrapped off the bottom of the pot.
The noodles within it were rather gummy/chewy. My biggest issue with this was being served Lukewarm soup. You describe it as "boiling for more than 12 hours, creamy pork bone broth.. " and I was served body temperature soup. Does the chef have heat urticaria? Is cooking things to appropriate temperatures a challenge? Is everything cooked by candle flame.
"If you are asking, why didn't you mention it when in the store could have fixed it." You are not going to improve the taste significantly by heating up, my meal that should have come hot from the jump, and I would rather not stay longer in a place when such crucial errors are in place.
I am clearly not a target audience for this restaurant since I like palatable food. -5/10 for the Tonkotsu Ramen. Again this is a new restaurant. I could have just come on an off night, so I won't say don't go here because they could always improve upon the customer experience. I, on the other hand, will never return as it does not pass the "is this place better than Kinton Ramen scale" that I use to judge...

Food: I would refrain from ordering their traditional Japanese Ramen (I had the Miso Ramen). The broth was very mediocre and the noodles were too firm but the pork chasu was delicious.
Chicken Karaage was good.
I would recommend trying their Laksa style food. I had bits from my family's dishes and it was tasty.
Service: This is what really made the experience horrendous. The two waiters serving our tables were nice enough. Not too sure if they were short in the kitchen BUT the food took too long to come out. The restaurant was not busy. Other tables received their dishes before we had and our dishes came out at different times - by the time half the table had finished their food the other half had just received their dishes. We mentioned the wait times to our servers but all they did was inform us that the food on the way.....
The staff were kind enough to play birthday music as they presented me and my family two complementary tiramisu desserts for my birthday. However, they brought the desserts without spoons - I had to flag down the servers and request them. To make matters worse, half the spoons they brought out were dirty (not water marks but food grime!!!). When I told one of the servers, he apologized and took back the dirty spoons but never came back to us with clean ones..... So I decided to use the forks they have stationed there and guess what? The forks were dirty as well!!!!!
Dissatisfied, we requested to speak with the manager but they were not working. The servers apologized but said they could not do anything for us and gave us the restaurant's business card - zero accountability.

We ordered the miso tonkatsu ramen, umami bomb ramen, takoyaki and a kids meal which was supposed to be chicken karaage but apparently they ran out so they suggested chicken wings and I said ok. First the kids meal, it was $13.99 for a small bowl of rice and 4 tiny pieces of chicken wings. I wish I took a picture but my kids wer too hungry. The most disappointing part is the wings were unseasoned - no pepper, no salt, no nothing. Didn’t even offer a dip or something. Rice was dry and not cooked enough. They even put green onions to make it pretty but they are dry, like it’s been chopped since morning. The takoyaki were very small and tiny bit of octopus for $10. Not worth ordering. Now for the ramen. Some reviews says the portion is great and it is not. The bowls are small. The umami bomb ramen I would have expected to be bigger since it’s more expensive but it’s the same size. The miso tonkatsu was missing the bamboo shoots. The egg tasted bland. Ramen eggs should have more flavour since it’s marinated in chashu broth. Both ramen just didn’t have the umami I’m looking for. I’m not an expert but ramen is one of my favourite dish and have to many ramen restaurants. And lastly, we were the only customer and our server forgot our beer. Whe I paid she didn’t even notice.
