This is the place that made me fall in love with Quebec City, and makes me want to find every excuse to come back.
The food, drinks and etc is exceptional, and I'll go deeper into the experience via a music playlist. It's the only way I can truly express how inspirational the culinary experience was.
1.) Getting Seated - "Glass Animals - Your Love (Déjà Vu)"
You feel the vibe and groove that they're in. They're focused, serious about manning their stations and ensuring everything is in place to execute the experience that they are about to deliver to you. They know this culinary experience is their creation, and they are solely responsible for it.
Even if's just for this one meal (or perhaps more), whatever it is, they can feel your love for good food.
2.) Ordering drinks / experience true Mixology - "VULFPECK - Back Pocket"
Amazingly great mixed drinks with combinations & blends that no words could truly express. Reading the menu, you can "ballpark" the taste - but the taste and quality of the finished piece just completely defied expectations. This is true mixology and the true work of an artist. It made us absolutely delighted and excited, it breathed life into the rest of the night.
3.) Main Entrees - "Moby - The Last Day (Reprise Version)"
We went twice over a span of 3 days, we just had to. The duck, lobster, and etc - all amazing. When you feel all is lost, everything is dull, their creations will inspire you to tackle the world again - in short, it made us feel alive and actually "living". It felt like they simply wanted to create flavours for the art, but to also celebrate the path less taken of focusing on mastering culinary fundamentals vs extravagant techniques / exotic ingredients.
4.) Dessert - "Adé - Tout savoir"
The Desserts are re-creations of traditional pieces with a very small but significant tweak that makes you reconsider what your understanding of a creme brulee is, a chocolate cake, and even a Tiramisu. The flavor was inspiring to the point that it made us feel it's not worth it to be drained by past experiences. There's still so much to discover in what you thought was plain, and never stop discovering more / try to know everything.
Pardon me for taking up to two months to write this review - and to this date we can not stop reminiscing about the culinary experience at Nouvo.
This is not just a plain "hotel restaurant", it's an amazing crew just beginning their journey. I am excited to see what comes next for them.

Arthur at the bar is clearly a Master of his Craft, and is ready to amaze you with the perfect balance of your favourite drink, or to make you fall in love with his creations from Tuesday to Saturday. Read moreI recently dined here and had an absolutely fantastic experience. I would give it a glowing 5/5 stars! The food was exceptional, and the service was top-notch. Our server was amazing, providing helpful recommendations and expertly pairing the perfect wines with our meals.
One dish that truly stood out was the bolonegese. It was rich, flavorful, and absolutely delicious. If you have the opportunity, I highly recommend giving it a try!
