I was interested in trying Bun Rieu Cua for my first time while working away from home in Regina. After a quick web search Cô Ba Bistro peaked my interest. The reviews, rating and photos looked promising. The menu seemed to capture many popular Asian dishes but I was here for Vietnamese cuisine. I arrived at the restaurant at 5:45 on a Sunday after work. I walked in and was ushered to my table. I sat down and was presented a menu and water, cutlery and garlic. There was one other table of 15 (4 children) in the dining room. I quickly ordered Pork Spring Rolls, Bun Rieu Cua and Sticky Rice with Mangoes for dessert. The server up sold me on some bubble tea which I accepted and selected Taro with Black Pearls. She punched in my order and within 8 minutes I received my spring rolls along with my dessert. I began to eat my appetizer and within 5 minutes the bubble tea arrived. During that time another person was seated nearby and ordered Pho and sticky rice with mangoes and was also up sold the bubble tea. A short time later another table of three arrived bringing the total number of guests in the restaurant to 20. It was already 6:15 when the red flags 🚩 went up and I realized my server had forgotten my soup. The gentleman beside me had already eaten and was getting up to pay as well as the other table of 3 was beginning to eat their meals. I patiently observed the 3 servers struggle to serve the group of 15 on the other side of the dining room. I could over hear them bringing incorrect items to guests and trying to insist they substitute their orders for the incorrectly ordered dishes. There were numerous people eating while others hadn’t received their food. In the meantime I managed to get the attention of the server who took my order and politely asked her how my soup was coming along. She replied in shock and immediately apologized that she forgot to order it and disappeared into the kitchen. Minutes later another server came with cutlery in which i already had received upon sitting and also offered an awkward apology confessing that it was so busy and that’s why the mistake. I reassured him and told him not to worry. I eventually received the soup at 6:35. I found it to be ok but not worth $16.99. It had a modest amount of protein and less noodles than many other restaurants I frequent for that price point. The broth was light and lacked depth of flavour. The garlic helped and also tried to remedy it with chilli oil but the chilli was bland and tasted old. The food I ordered overall was good but not great. Having been to Thailand I was excited to have sticky rice and mangoes for dessert. It was slightly disappointing to be honest I’ve had better on the street in Bangkok. My last observation I should point out while spending about an hour and over $40 (no tip)in the restaurant is that I never once saw a delivery driver come for pick up orders. To me that’s a tell tale sign of this restaurants ability for success. Such a shame because the menu looks great on paper. I ordered the crispy pork noodle bowl, and it was perfection—the pork was incredibly crispy yet tender inside, and the combination of fresh herbs, pickled veggies, and fried shallots made every bite so flavorful. The portion was generous, and the sauce tied everything together beautifully.
The spring rolls were another highlight—golden, crispy, and packed with flavor. They paired perfectly with the dipping sauces, which added just the right balance of sweetness and tang. I also tried the bao, which was soft, fluffy, and deliciously filled.

Who knew that Papaya could be shredded into thin crunchy pieces and dressed with a light, sweet, and salty vinaigrette? That was followed with Bun Cha Co Ba - grilled pork and tiny ground pork patties in seasoned broth and served with vermicelli noodles, fresh greens, and basil leaves and match stick sized strips of pickled carrot. We finished the meal with a banana in bun-like grilled sticky rice with coconut and peanuts. Even the green tea was perfect.
