The food was delicious. The bun bo hue broth was practically perfect. Spicy, flavorful, rich, screaming with umami. However, the hue noodles were slightly overcooked, and were softer than preferred. I prefer my hue noodles to still retain a bite of firmness. The regular beef broth was delicious and rich with flavor too. We also ordered pork spring rolls with our pho and they never came. The pho came out very fast (less than 10 minutes) but we were nearly done with our soups when the waiter came over to inform us our spring rolls would be out soon. He said there had been an issue with the kitchen causing its delay but we opted not to get them anymore as we were almost done with our food already. It was pretty disappointing as I was looking forward to the crunchy spring rolls with the delicious hot broth. We were also the only ones dining there at lunchtime on a Tuesday so it was surprising that they never brought out the spring rolls. However, after seeing all the great reviews here, I decided to give it a try, and I’m so glad I did. This place is legit. The soup is incredibly well-made—rich and flavorful without any of the artificial taste you sometimes find at other pho spots. Having worked at a pho restaurant before, I can tell they take the time to craft this great soup, and it truly shows in the depth of flavor.
The tendon and tripe had a perfect texture—they practically melted in my mouth. I don’t usually enjoy tendon or tripe much, but the way they were prepared here was just right, making them really enjoyable to eat.

Delicious filling, lots of texture, served piping hot, super crispy exterior. I had the #14 pho but asked for no tripe. Broth was flavourful, meat tasty, good textures in the tendon and brisket, nice spongy beef balls. I'll say best Vietnamese on East Hastings between Main and Bounday until I taste better.
