By the time you read this, it might be already just a little bit too late. The extraordinary remarkable chef Justin Song Ell might already have moved on to his next project. However, vestiges of his fabulously considered menu should still remain. A bit of context: I don't usually like IPAs or otherwise hoppy beer. However, when paired with well-thought-out flavors, high quality ingredients, and intentional food, it's something I can return to over and over. Beef Tartare, Endive Salad, Braised Lamb Neck... at a brewery?!?!! Yeah, you've totally been missing out. Remember those off-menu Burgers that you've heard rumors about a few years ago? Aged, hand-ground blend of neck, flank and heart, finished with duck fat aioli? Yup, that was Justin when he was still at Crowbar. Versions might have shown up at Superflux. The beer is still great, try a salad. Keep your eyes open.

They do 3 Half Pours, which is more generous than you would get in a standard flight. My server was very helpful in figuring out what I wanted, and she always checked up and refilled my water even if there wasn't much gone. You can get all types of beer, but I tried Colour & Shape (IPA) and thought it was the best of the beers I sampled. They also serve cider and wine if you don't desire beer. There was a small selection of food, mainly hot dogs, it appeared. The only minor niggle I found was that the menu font is hard to read. The print is tiny.

Pretty cool vibe in the tasting room. It's open to the brewery which is interesting. Minimalistic and no beer board which seems odd as it's always nice to see that menu like most places have. Since their esthetic is simple and clean I guess it makes sense.

The beers all seem to have Citra and galaxy hops which are two very complex hops on their own. Many of the dry hopped beers are so over hopped they have "hop burn" which irritates the tongue due to all of the hop matter in the beer. I don't think you need to over hop the beer so much that you overload the palette this much. Despite my opinion this brewery is always very highly regarded and rated.

I'd suggest trialing other lesser known hops in single hop batches or less aggressive hops together as well as dialing back the bitterness. I'm well aware that the ibu scale is not an accurate representation of beers bitterness but some sort of indication could be given to let the customer know what to expect, even if it were a low medium and high rating.
