Great bar and food. The highlight of the bar is their extensive gin collection, but also features plenty of cocktails with other liquor, wine, and craft beer on draft. The food menu is interesting and eclectic enough to have something to please everyone (including a few vegan and GF options), but not overwhelming with too many choices. It's connected to a hotel but you wouldn't guess that it's a hotel restaurant. Earthy and classy atmosphere. One detail that could have improved the atmosphere would have been to change the music - it seemed like they were playing one or two long dance tracks through the entire time we were there. Not a big detractor from the experience though. The service was good - the staff were pleasant and wait times were reasonable. I'm not a gin enthusiast so I did not get anything with gin, but I was pretty impressed with both the strawberry g&t and the g&t flight that my parents ordered. The strawberry g&t was served as a large glass with ice and strawberries, and the gin and tonic on the side, so the gin could be tasted on its own and the drink mixed to taste. The gin and tonic flight was also presented with each of the components separate. The instructions for drinking were to first taste the gin on its own, then add ice to see how adding ice changes the flavour, and finally mix with tonic. My beverage of choice was the "big easy" stout, a nitro Irish-style stout, which I really liked. Nice to try a drier stout with the nitro. I had the Korean cauliflower bowl for my entree. The bowl was delicious - the Korean fried cauliflower were nice and crispy and flavourful, and the coconut cauliflower rice also deserves a special mention. My parents got roasted red pepper linguine and the arctic char, which I also tasted. We shared a carrot cake and chocolate cake for dessert. The spiced whipped cream that comes with both cakes and the red wine cranberries on the chocolate cake really elevated the taste. The three of us were in agreement that all the food was great. We were very happy with our choice to eat here.

Every single dish was packed with flavor and a great visual presentation! Ambiance (5/5): It’s a bit dark on the inside but lovely chic decorations. The volume was okay that it wasn’t too loud that you can hear. It was very cozy. FYI: Their bathroom is shared with the building so you have to go through some doors/hallway in the back using a passcode. Service (5/5): It was a Monday 7pm and there were a few tables available so we were immediately seated. Our server was absolutely fabulous! She was super sweet and asked us our preferences for a variety of options. The kitchen also said that they didn’t like how the duck came out so they wanted to make it one more time, as a courtesy, they gave us a dessert on the house!! Across the Pacific Skye was smoky, nice touch w the orange peel, and tasty. The gin comes in a huge goblet so def go with a 2 oz pour! Cheese board (5/5): Definitely a good amount even for the 4 of us. We had a small taste of each of the unique cheese pieces. The jams complemented the assortment. It comes with a variety of breads and chips, which could have been replenished for free. Duck Breast (5/5): It was an artistic presentation with superb taste! It was perfectly tender and had a lot of flavor. The roasted carrots and kale were packed with seasoning and taste. The portions may be considered small for some. Short Ribs: I had a taste and it was fall off the bone kind. The meat portion was generous. Swordfish: While the fish was very soft, I think the fish itself could have had more flavor. However, the overall taste of the dish was still great!

They are not using tweezers in the kitchen here and you can take that to the bank. The guys in the araxi kitchen with their dainty little fingers are up to some great stuff back their, but nothing they can do will beat Brickworks $36 FULL duck breast. We’re not talking thin slices shaved onto the plate, we’re talking full breast. So much breast on these plates they should come with a parental guidance warning. Sure you can still go to one of the “classic” whistler dining spots… if you don’t care for a good time. Brickworks is bringing life back to the whistler dining scene. If you like to drink as much as you like to eat i’d recommend a seat at the bar because the guys there know their stuff. Our bartender, either Craig or Greg (it was hard to here) put some twists on my favourite cocktails that i’ll be incorporating into all my future orders as well as adding his favourite drink, a paper plane, into my new ordering rotation as a mix up from my usual go tos. Other honourable mentions was the bison carpaccio and the lamb. Both were outstanding and i’m always a fan of caper berries. Such an accesible delicious ingredient wildly under utilized. i’ll be back for sure.

After my most recent experience at Brickworks it’s clear that they are in the upper echelon of whistler dining. While whistler fine dining classics (you know the ones) still reign as kings amongst the tourists and many locals, Brickworks is giving them a literal run for their money by providing equal if not higher quality dishes with LARGER portions. So I’ll start with the good, the most of food and drinks were quite tasty;, once we received them; stand outs include the gin and tonic, bison carpaccio, potato croquettes and truffle raviolis. Now to everything else, we had a 7:30 reservation and weren’t seated until 7:40 which would have been fine if they hadn’t made another group leave to cleared off the table despite there being multiple empty clean tables available. Our server didn’t even greet us until 8:05, he walked by us multiple times to check on his other tables including clearing, taking orders and running food, so we didn’t have our drinks until 8:20, 40 minutes after being sat. After already deciding on our food (we obviously had a lot of time to choose) we were informed that about 6 items of their already small menu were sold out for the evening. If you order a salad get the dressing on the side because my cesear was just wet and soggy with the amount of dressing. Perhaps they were quite understaffed, but there is not an excuse for just the complete lack of costumer service. I work as a server and am a former host, both the host and bartender were idle for long stretches of time while we’re were waiting for our server to even acknowledge us. If you’re running a small staff, your staff should be ready and able to assist in serving rather than relying on the servers to take orders, run food and drink and clear tables. I’m sympathetic to the server as it seemed like he was doing everything while the host literally only sat 3 other small parties the entire 2ish hours we were there. It truly felt like we were the last priority to the staff. Save yourself the trouble and just go...
