I am thoroughly impressed. When was the last time you've seen a honky chunk of meaty bone in your bowl of pho? Doesn't happen enough! Hence I was so pleasantly surprised and punctuated with a pronounced tip. This pho (house special) tastes authentic, meaning without pseudo-flavorings or such fillers and additives. The broth is more on the lean/meaty flavor side, not very aromatic, and somewhat rather salty (but some people like that, I get it). Still however very very tasty. The brisket was properly tender, and the steak fatty with a fresh meaty flavor. The pricing is very reasonable, and the place got very busy over lunch. Service is only a tad slow because they just opened, and it takes time for the kitchen and staff to fall into a rhythm. Allow them patience and they will reward you with a proper quality meal. Fresh tender meat, not overly spiced in terms of aromatics, toasty crisp bun, decent size, great for lunch. The elements of composition are tame and hence the catering is geared towards a Canadian audience. It's a Vietnamese restaurant that remembers we're still in Canada. We had the Salad Roll, Shrimp skewers, and the special vermicelli. The salad roll was tasty with extra fresh lettuce - nicely done. The shrimp skewers seemed like they had been pre-cooked and warmed up - flavour not great and did not have that plump fresh feel one would expect from shrimp. Vermicelli was the biggest disappointment. Not sure if they put the wrong sauce in our take-out cup but it was super oily and we could not finish the dish.
