They use a lot of various older techniques and grains that require more hardwork, persistence and perseverance in a consistent manner to make what they make and they do the heaven of a job at it and their breads are just heavenly.
My absolute favorite is always the foccacia, then followed by the spelt followed by the scones and the rest. Their soup and toast are something that one should have once and they make some real good pizzas when they do.
Lovely bunch of hardworking people making the best of what they make.
June 2023 edit: Finally here at the right time and place to get hands on their Pizza and oh my god are they delicious + if you choose their sourdough crust it just elevates the whole pizza experience. Having it made in wood fire dome oven gives the pizza that nice bubbly crunchy crust + not to discount their well made dough.
Their pizza toppings and ingredients are clean and nice and the pizza tastes really well. We tried the Manitoberrean and Spanakopizza; their menon and pepperoni funghu and cheese funghi and deluxiest and red pepper popeye they all also sounds great, but those will for some other time.

Can't say I was too impressed personally. I saw they had Vegan soups so I asked about wheat free breads for my mother who is vegan and wheat intolerant (Not a gluten issue), was told the spelt was wheat free. Which makes no sense cause spelt is an ancient form of wheat. But I wanted to try it for myself anyway as I love spelt bread.

One month later: I've found myself at Hildegard's quite often (even though I usually like to go to a wider variety of places). Here's why:
Good, locally roasted coffee at a good price Great atmosphere: Bright, LOTS of LIVE, healthy plants, with a beautifuly restored tile floor that's got to be about 100 years old. My family loves the bread, even if it's day old ($4/loaf for day old).
