新成削面馆 / xincheng xiaomian guan / Xincheng Sliced Noodle Restaurant used to be a private owned restaurant. Until in 1956, it has become the first state-owned company restaurant in 前门大街 / Qianmen dajie / Qianmen Main Street. It opens in the early morning on 6AM until 10PM, mostly crowded with locals, and shared table.
Their signature menus are Black Bean Sauce Noodle and Knife Cut Noodle. Firstly, we need to order what we want and pay at the cashier, then wait while sitting until the cook call that our food is ready.
We have been here for both lunch and dinner. Here are what we tried :
老北京炸酱面 / lao beijing zhajiang mian / Old Beijing Black Bean Sauce Noodle (CNY 29) If you have ever tried or heard a Korean dish named "Jjajangmyeon", actually it is originally from Chinese dish called "Zhajiang Mian". It is a thick noodle with sliced cucumber, vegetables, soybean, served separately with pork in black bean sauce and oil. Mix it all together, stir thoroughly, then enjoy the tasty Noodle!
小炖肉刀削面 / xiao dun rou daoxiao mian / Stewed Meat Knife Cut Noodle (CNY 29) The noodle is thicker and chewier than the previous one and in the knife-shaved shape served in a savoury and hot broth with pork. It is a good dish as a "warmer" in the cold day.
京味烧麦 / jingwei shaomai / Beijing Flavor Shumai (CNY 20) This side dish consists of five shumai. Beijing styled shumai / siomay is just like this one. A steamed shumai filled with glutinous rice, minced pork, and mushroom. Honestly, It is a "heavy" side dish because your tummy will full after eating this...

We ordered zha jiang mian (CNY 29). Zha jiang mian is actually the original version of Korean Jajangmyeon. The noodles are served with various type of vegetables such as sliced cucumber, radish, edamame, and bean sprouts, mixed together with thick meat sauce. The sauce is made with sliced pork and salty fermented yellow soybean paste. Stir to combine well and eat immediately. Savory and sweet, this tasty noodle bowl is the bomb!
