After days of local HK food, we took a break and decided to dine at Ichiran. We had been craving for their signature Ramen since our last visit to their Shibuya (Tokyo) outlet. Although we can easily purchase their Instant Cup Noodles from Supermarkets these days, it cannot beat freshly cooked. Almost everything including the decorations and furnishings were similar to their outlets in Japan, thus we were overwhelmed when we entered the restaurant. However, we were brought an open dining area with tables and chairs, instead of booth seatings with bamboo curtain. And so, thats one different in overall dining experience between both countries. Ordering procedure was similar though. You get to select how Rich you want for your broth to be, Dashi Level (Seasoning Stock), Spicy level, Noodle texture and so on. I opt for a Bowl of their Classic Tonkatsu Ramen with Extra Rich broth, Strong Dashi Level, Medium Spicy, and Extra Firm Noodle (My preferred combo after trying out several options previously) Well, my bowl of customized Ramen was served within 15 minutes and Wow, its was as delicious as what i had in Japan (as i can remember, unless my taste bud had changed). Service wise, although the service staffs in this branch were not as enthusiastic as compared to their japanese counterpart, they were still attentive and efficient. Overall, it was well worth the trip and queuing time of about 20 minutes.

So... I have heard the hype, so I had to check it out. Quite an experience for my first time. I'm glad I watched the video from their website first. There was plenty of very attentive staff who helped me out. The booth spot was too small for my build, but it was fairly empty, so there were no problems. You have to order and pay on an app before you are served. The bill rounds to a whole number after a 10% service charge. I might have been a little peeved, but it was so fast, and the staff was exceptionally helpful. Seriously, I paid and boom! Food started being sent from the bamboo curtain. It's a little wild to see. I love tonkotsu ramen, so I was happy with the options available. Dashi strong, Rich, firm noodles. Chashu was not bad but not my preference. The egg was still in the shell and was fun to crack myself. It was not the biggest bowl, but the portion was perfect when you had all the sides. The extra noodles option would have made it a large meal. The broth was flavorful and not too salty. Definitely looked greasy but didn't taste that way. Rich and not overly strong, so a lighter version than I'm used to. I'm kinda preferring this style. Anyway, it's worth a trip for the experience, and I'd recommend it if someone wanted this specific type of meal.

(1) Layout of the place: The place wasn't designed well. The person who greeted us at the door said to go down, turn left, and then sit down. So I did just that and saw two benches in a red-lit hallway. My friends, a couple of strangers, and I waited for 5 minutes, but nothing happened. As a person who doesn't naturally like to sit down, I got up and walked a bit to see where the nearest toilet was. I naturally went further into the building, where I saw a sign that said "go this way" and required me to take a left. Suddenly, I saw where the real restaurant was. I thought to myself, well, at least they could have had something brighter, like flashing arrows or something in the hallway! (2) The atmosphere: After going in, we ordered our food and waited for another couple of minutes. The place was pretty packed and noisy. I could barely hear myself think. (3) The food: It wasn't the best food of its kind, even at its price point. (4) Final verdict: Unfortunately, I won't be visiting this specific place again, but I may give other branches a shot. Anyway, here are some photos to help you know where you're ultimately supposed to be if you go there. Disclaimer: This is a review made months after the visit so some details in (1) are not clear. I just knew we were waiting in uncertainty.

Ichiran is my ultimate favorite ramen and I discovered this from Japan so was ecstatic to know that it had a branch in Hongkong - when we first got there, we thought there's no line til we reached the "80 mins waiting" sign. The whole line was going around and even if it's always worth the wait in the end, the experience was just totally different - maybe because we ate at the face-to-face part instead of the solo one. But its also the feeling of being surrounded by lines that changed it - even til paying you still had to line up. I missed the vending machine process where you order and pay already which didn't ruin your happy meal experience after. It's just not nice to start and end with a line I guess. But it's still at least 4 stars for me because of how consistent it remains to its quality - customized based on the firmness you want, richness of the broth remains and the same goodness I missed. The sliced pork though just was a bit less soft than the one in Japan but other than that, the taste transported me back to exactly how I remembered it before. Still worth coming back for, despite the lining up for everything experience. The ramen is worth it!

The best ramen. This Hong Kong branch duplicates almost exactly the Japanese Ichiran experience. It’s on Minden Row in TST near an Eric Kaiser cafe. They have a large hallway with tables for big groups but they also provide the authentic Ichiran experience of slurping on your ramen in the privacy of your own cubicle. No ticketing machine here. You sit down, fill up an order coupon (don’t forget to order the soft boiled egg and extra pork), press the buzzer and wait for heaven to come to you through that slot in front of you slightly covered by a bamboo curtain. The broth is spot on—creamy, porky, salty and lingers in your mouth just to give you something to reminisce as you walk out of the restaurant. The thin slices of pork are so tender. The noodles and egg cooked perfectly. The soft boiled egg is served separately and is cold. So if you want it runny put it in as you are about to eat the egg. But what I do is let it soak in the broth for a few second so it will have my preferred consistency. Totally up to you. Opens 8:00 am until 5 or 6 am.

After coming from Disneyland, we had trouble finding a place to eat dinner because most of the places were closed. But this Ichiran was open until 2am so decided to eat here. We've eaten at ichiran in Japan before so we had our expectations. First thing we noticed was that there was a line at the entrance. This was around 9:30 pm. But it moved along fairly quick. The main difference we noticed was that instead of the individual cubicles they had in japan, we were seated in a common dining area with other people. Also, it's a lot louder and busy. We ordered their classic tonkotsu ramen which was great and really hit the spot since it was really cold outside. We finished our food then left since we couldn't really hear each other. A good thing about this branch is that it was near chungking mansions which was where we were staying. Overall, it was a good place to eat if you don't mind the crowd.
